Ingredients
- 1 stick (8 tablespoons) unsalted butter, melted
- 2 3/4 cups self-rising flour, sifted (see Cook’s Note)
- 2 tablespoons sugar
- 3/4 cup shredded Cheddar
- One 12-ounce can or bottle lager, pilsner or IPA-style beer, at room temperature
- 1 cup sliced pickled jalapenos
Instructions
- Preheat the oven to 375 degrees F. Brush an 8-by-4-by-2 1/2-inch loaf pan with some of the melted butter.
- Whisk together the flour, sugar and 1/2 cup Cheddar in a large bowl.
- Pour the beer into a medium bowl. Add half of the remaining butter and whisk together (it will get foamy!).
- Pour the beer-butter mixture into the flour mixture and fold until just combined (it’s ok if there are lumps). The batter will be relatively thick and shaggy. Transfer to the prepared loaf pan and pat out into an even layer. Pour the remaining butter over the batter and top with the remaining 1/4 cup Cheddar and the jalapeno slices. Bake until golden brown and an instant-read thermometer inserted into the center registers 190 degrees F, 1 hour to 1 hour 5 minutes.
- Let cool in the pan on a rack for about 15 minutes. Invert the bread out of the pan and eat warm or at room temperature.

Reviews
The room-temperature beer and melted butter did not mix. In fact, the butter coagulated. I added it to the flour and cheese mixture and mixed. The batter seems too much for the pan, though, so I didn’t add the butter to the top. We’ll see how it comes out! Fingers crossed!
Is it necessary to have an ad in the middle of this recipe? I don’t need store ads…
Use a bigger loaf pan. I used one that was 8.5×4.5×2.75 and butter overflowed and started smoking in the oven.
This bread was very easy and tasty! Taking the advice of other comments , I added jalapeños to the batter too! I used fresh for the batter and pickled for the top! I used pickled jalapeños from a friends homegrown ones that were really spicy but I loved it. I could see omitting the jalapeños and having a tasty bread also!
I did not have self rising flour, so made up my own. I also accidentally added an extra spoonful of sugar, and omitted the jalapenos because of picky kids. The bread baked in 50 minutes and was absolutely delicious.
This had a great texture and flavor. I’m guessing any beer you have in the fridge would work. I used Bud Light. This is something I will make often since it’s so simple and everyone liked it.

This is very good but in my opinion not good for left overs. Bake and eat right away. I put 1 cup of cheese and definitely use a lager or ale. Not Pilsner. Also I diced up some of the jalapeños and mixed in the batter. Super yummy. But again my recommendation is to eat right away with a meal.
So delicious! I even subbed a gluten free flour blend (but obviously the beer isn’t gluten free) and it came out amazingly well! The butter finish makes a delectable crust.
