Ingredients

  1. 2 tablespoons red wine vinegar
  2. 1 tablespoon fresh lemon juice
  3. 1/2 teaspoon dried oregano
  4. Kosher salt and freshly ground pepper
  5. 1/4 cup extra-virgin olive oil
  6. 1 small cucumber, chopped
  7. 1 cup cherry tomatoes, halved
  8. 1 large head romaine lettuce, chopped
  9. 1/2 cup kalamata olives
  10. 1/2 cup large caperberries
  11. 1/2 cup chopped Peppadew peppers
  12. 1/2 red onion, thinly sliced

Instructions

  1. Whisk the vinegar, lemon juice, oregano and 1/4 teaspoon each salt and pepper in a large bowl; slowly whisk in the olive oil until smooth. 
  2. Add the cucumber, tomatoes, lettuce, olives, caperberries, Peppadews and red onion to the bowl with the dressing and toss. Season with salt and pepper.

A friend brought this wonderful salad and vinaigrette to our get together. “Can I tell you” (as Sandra Lee oftens quips on her cooking shows this was fantastic. It was a huge hit with all our dinner guests. The only change she made in the vinaigrette was heavy on the lemon. Try this recipe; you will not be disappointed!
