Soy, Ginger, Garlic and Lemon Roasted Broccoli

We make roasted broccoli at least twice a week and I’m always trying out new flavor combinations. Soy sauce with ginger is classic, and it makes a great side for a variety of main courses.

Ingredients

  1. 2 tablespoons olive oil
  2. 2 tablespoons fresh lemon juice
  3. 2 tablespoons soy sauce
  4. 2 teaspoons grated fresh ginger
  5. 1 clove garlic, grated
  6. 1 head broccoli, cut into florets

Instructions

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the oil, lemon juice, soy sauce, ginger and garlic. Add the broccoli and toss to coat. Transfer to the prepared baking sheet. Bake for 30 minutes, stirring once halfway through. Serve hot.

I love roasted vegetables. But this flavor profile did not work. The lemon and soy sauce were overwhelming and we couldn’t taste the ginger and garlic. I did it as instructed. Will be throwing this recipe away. We as a family did not enjoy it at all

I made this, not deviating from the recipe except I always use low sodium soy sauce and I used half a lemon which yielded 1 1/2 Tablespoons one lemon juice. I did not like this at all. Soy sauce was overpowering and I didn’t care for the lemon either. We didn’t eat much and trashed the leftovers. Will not make again.

SO SALTY. The soy sauce / sodium overpowers everything. Would definitely recommend using low sodium soy sauce. Both my spouse and I took a few bites and threw the rest out.

This was delicious! Somehow the soy sauce and lemon sink into the broccoli so each bite was flavorful. I did not add the extra salt at the end like Katie did on TV. I had to stop myself from eating the entire tray in one sitting. I plan to add it to salad throughout the week as another flavor. I will definitely be making this again!

Love roasted broccoli but this isn’t worth the effort. All I could taste was the lemon juice. I won’t make this again. Sorry, I’ll stick with oil, salt, and parm.
