Hot Spinach and Crab Dip

Ingredients

  1. 2 tablespoons unsalted butter
  2. 1 small onion, finely chopped
  3. 1 clove garlic, finely chopped
  4. Kosher salt and freshly ground black pepper
  5. 8 ounces cream cheese
  6. 1 teaspoon Worcestershire
  7. 1/2 teaspoon dry mustard
  8. 1/2 teaspoon paprika
  9. 1/8 teaspoon cayenne
  10. 1 pound frozen chopped spinach, thawed and squeezed very dry
  11. 8 ounces lump crabmeat, picked through for bits of shell
  12. 1/2 cup shredded Monterey Jack
  13. 3 tablespoons grated Parmesan
  14. 2 tablespoons panko breadcrumbs
  15. Crackers, for serving

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Melt the butter in a medium pot over medium heat. Add the onion and garlic, season with salt and pepper and cook, stirring occasionally, until softened, about 6 minutes. Add the cream cheese, Worcestershire, dry mustard, paprika and cayenne, and stir until melted. Add the spinach and crabmeat, and stir until warm and bubbling. Stir in the cheeses and season with salt and pepper.
  3. Transfer the dip to a small baking dish and top with the panko. Place the baking dish on a baking sheet and bake until bubbling and golden, about 15 minutes.
  4. Serve hot with crackers.

Awesome dip!! Had everything cut up and ready to go. If cream cheese is room temp, everything goes fast! I also used lumpy crab from the seafood area of the supermarket. It was the hit of the party!

I followed the directions perfectly but it came out dryer than a popcorn flatulent. Next time I’ll add more cheese or less spinach.
