Ingredients
- 2 1/2 cups all-purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon fine sea salt
- 1 cup (2 sticks) chilled unsalted butter, cut into 1/2-inch cubes
- 1 cup coarsely grated sharp cheddar cheese, firmly packed
- 5 tablespoons ice water, or more as needed
- 1 1/2 tablespoons cornstarch
- 1/3 cup sugar
- 6 (6 to 7-ounce) Golden Delicious apples, peeled, cored, and thinly sliced
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon grated fresh lemon zest
- Pinch fine sea salt
- 2 tablespoons (1/4 stick) chilled unsalted butter, diced
Instructions
- For the crust: In a food processor, mix the flour, sugar, and salt and blend for 5 seconds. Add the chilled butter and pulse until the dough looks like fine meal. Add the cheese and pulse 5 times. Transfer the mixture to a large bowl and sprinkle with 5 tablespoons of ice water. Use a fork to fluff the mixture until moist clumps form. Add more ice water by the tablespoonful if the mixture is dry. Gather the dough into a ball and divide in half. Shape each half into a disk. Wrap in plastic and chill at least 1 hour.
- For the filling: Preheat the oven to 400 degrees F. In a large bowl, mix the cornstarch and sugar, making sure there are no lumps in the cornstarch. Mix in the apples, lemon juice, zest, and salt.
- On a lightly floured surface, roll out 1 of the dough disks into a 13-inch round. Transfer the dough to a 9-inch diameter deep-dish glass pie dish and brush the overhang with water. Pour the filling into the dough-lined dish and dot it with the 2 tablespoons butter. On the same lightly floured surface, roll out the second dough disk into a 12-inch round. Place the dough on top of the filling. Press the overhang of the bottom and top dough pieces together to seal. Cut the overhang to 1/2-inch. Fold the overhang under and crimp decoratively, forming a high-standing rim. Cut 3 (2-inch) slits in the top of the crust to allow steam to escape.
- Bake the pie until golden brown, about 30 minutes. Cover the crust edge with foil and reduce the oven temperature to 375 degrees F. Bake the pie until the filling bubbles thickly in the center, about 30 minutes. Cool pie on a rack for 1 hour.

This is not a keeper. The crust was good with the cheddar cheese, but I used 1 stick of butter and 1/2 cup shortening. I followed the apple filling as instructed, it was not sweet enough and not enough sauce mixture with the apples it came out pretty dry.
I made this today for New Year’s eve, and what a scrumptious pie! I absolutely love it! Love the cheddar cheese in it! I tweaked it a little bit by making the sugar 1/2 cup instead of the 1/3 listed on the recipe, afraid that it might be too tart as others who commented here had said. I just love this show!
This is the first time I’ve ever actually made a pie. Ever. The directions were clear and easy to follow. I’m not usually a big pie fan but when watching the show, I decided this was likely to be the one for me. I found the pie to be very good (I did leave out the lemon zest though – mainly because I had bottled lemon juice but had forgotten to pick up a fresh lemon). I was disappointed that I didn’t taste more of the cheese while eating it. However, I wasn’t eating it fresh from the oven as I had to make it the day before Thanksgiving. I’ve bought a new batch of apples and I plan to make it again tomorrow because I enjoyed it enough to think it was worth the effort to make it again. You should try it at least once. Thanks!
I hate to give a bad review, as it seems I am the only one who was not please with this pie who is writing one. I made this recipe, and followed it exactly, for Thanksgiving and it was a real bomb…and we love our pies. No one in the family liked this pie, not even my brother in law who will eat just about anything. Overall, the reviews from the family were that it was just far too tart…the lemon flavor was overwhelming! We only ate half the pie, and tossed the rest! Major disappointment.

A stellar apple pie. Usually like tart apples, but this was sweet wonderfulness, if that’s a word. Had a little problem getting the pie crust onto the pie after rolling, so I re-rolled it on a plastic cutting board and flipped that into the pie shell. It was just soft, but I probably left it out too long while cutting the apples. I love this pie!!
Made it for Thanksgiving dinner… It was a hit!
This was my first attempt at a pie from scratch and it was surprisingly easy. The crust came out flaky and delicious. I loved the addition of the cheese and did not find it overpowering, but very complimentary to the apples. I also think the addition of the lemon zest really brightens the flavor of the pie that both my boyfriend and I really enjoyed. Thanks, Anne!
