Florida Citrus Bars

Ingredients

  1. One 11-ounce box vanilla wafers
  2. 8 tablespoons (1 stick) unsalted butter, at room temperature
  3. 2 tablespoons granulated sugar
  4. 1 teaspoon orange zest
  5. Kosher salt
  6. Two 8-ounce blocks cream cheese, at room temperature
  7. One 14-ounce can sweetened condensed milk
  8. 1 cup confectioners’ sugar
  9. 1 teaspoon grapefruit zest
  10. 1 teaspoon lemon zest
  11. 1 teaspoon orange zest
  12. 1 cup whipped cream
  13. 2 oranges, peeled and sliced into rounds
  14. 1 grapefruit, peeled and sliced into rounds
  15. 1 lemon, peeled and sliced into rounds

Instructions

  1. For the crust: Line a 9-by-13-inch baking dish with parchment, leaving a 2-inch overhang for easy removal.
  2. In the bowl of a food processor, add the vanilla wafers, butter, granulated sugar, zest and a pinch of salt. Pulse until the mixture is a very fine crumb and is starting to clump together. Press the mixture into the prepared baking dish. Chill the dish in the freezer while you make the filling.
  3. For the filling: Add the cream cheese, condensed milk, confectioners’ sugar, grapefruit zest, lemon zest and orange zest to a large bowl. Whip together with an electric hand mixer until completely combined and there are no clumps of cream cheese. Fold in the whipped cream. Remove the crust from the freezer and pour in the filling, using a spatula to smooth it into an even layer. Return to the freezer and freeze for at least 4 hours or overnight.
  4. For the topping: When the filling is set, remove the whole bar from the baking dish and place on a cutting board; removing the parchment. Decorate the top with the orange, grapefruit and lemon rounds, then carefully slice into bars. Serve immediately.

These are delicious and very refreshing – a perfect summer dessert.  I only put grapefruit and oranges on the top as I felt the lemon would be a bit. . .much.  We loved it!

My parents can’t have grapefruit so we put oranges, strawberry and kiwis and added a glaze on top of the fruit and it was great!

-The glaze had 1 cup water, 1 cup granulated sugar, 1.5 tablespoons corn starch brought to a boil and then cooled.
Be careful with the zest because it can get quite orangey!

This is a perfect summer dessert. I’m a new cook, thanks to COVID-19 so when I saw this recipe, I had to try it knowing that I never really baked anything before. Thank you Trisha did this amazing, tasty, colorful dessert. My family and friends love it. People should try this. It was fun and easy.

Entirely too sweet, I even left out 1/4 cup of confectioners sugar. Also didn’t set well so it’s pretty gooey. I think with a few tweaks it has potential. Most of trishas other recipes are awesome though.

I can’t eat grapefruit, is there a good substitute that will still result in a similar citrus taste? I thought lime, but that may alter the taste too much…. kiwi – Might bet too sweet? Or blood orange make It too orange tasting? I’m just not sure :(.
