Anita’s Cheater Beans

Ingredients

  1. 4 strips bacon, cut into 1/4-inch slices
  2. 1/4 medium onion, finely diced
  3. Two 27-ounce cans pinto beans
  4. 2 serrano peppers, scored
  5. 1 medium tomato, finely diced
  6. 2 cloves garlic, minced
  7. Salt and pepper
  8. Salt and pepper
  9. 1/4 bunch fresh cilantro (don’t use the stems and don’t chop, just snip or pinch off the leaves)

Instructions

  1. In a large saucepan, fry the bacon over medium heat for 3 to 4 minutes. Then add the onions and cook until the bacon is cooked but not crisp and the onions are translucent, another couple of minutes. Do not drain the bacon grease because it gives the beans a good taste. Add the beans, peppers, tomatoes, garlic and 1 1/2 cups water, and cook for 10 to 15 minutes. Add some salt and pepper and the cilantro and remove from the heat.

These are my go to beans…but ya’ll, she forgot to add the water in the ingredient list!  And since they did, I’ll tell you that I added a tablespoon of Better than Broth Chicken in the HOT water and , mmmm more flavor depth!!

As always followed the recipe 100% and this was delicious. In the future I wil reduce the water by 1/2 cup and add more peppers because I love the heat, but this is great.

I made the beans for my 4th of July  BBQ and they were a big hit! I added a few ingredients to the recipe (chili powder and cayenne pepper ) to give a little more of a kick. Delicious!  Thank you Trisha!

Canned beans?? Yes I would say these are cheater beans. So easy to make fresh beans.

Then she adds water to the canned beans! Lol….sorry but some of these recipes on this show are just doctored prepared or canned foods. The fresh beans make a HUGE difference and these are actually Frijoles Charros or “drunken Beans”. Also better without the tomato although “Cowboy Beans” have the addition of tomato. This is just okay in a pinch but not really great.

I made these a couple of days ago and they were a big hit. I followed the recipe exactly except my grocery store didn’t have serrano peppers. I chopped two jalapenos and added them instead and it was the perfect amount of heat. These beans are absolutely delicious and will make often!

These turned out great but I also rinsed the beans.  I need to watch salt but it doesn’t hurt the family to have less of it either.  I I used only 1/2 cup of water because I read the recipe wrong.  It was plenty of water.  I’m not crazy about onion so I used 1/4 diced red onion only because I was out of shallots which is my go to choice.  I’ll make these often.
