Shortcut Peppermint Bark

Ingredients

  1. 20 ounces white chocolate or almond bark, chopped
  2. 1/2 teaspoon peppermint extract
  3. 30 mint-flavored chocolate sandwich cookies, such as Oreos
  4. Crushed peppermint candies or candy canes, for topping

Instructions

  1. Bring a shallow pan of water to a simmer. Add the white chocolate to a heatproof bowl. Turn the heat off and place the bowl over the hot water, making sure the bottom doesn’t touch the water and steam can’t escape (see Cook’s Note). Add the peppermint extract and stir with a rubber spatula until the chocolate is almost fully melted. Remove the bowl from the pan and stir until fully melted.
  2. Dip the cookies one by one in the melted chocolate to cover completely, then transfer to a parchment-lined baking sheet. Sprinkle the crushed candy over the tops. Allow the cookies to set and dry before serving.

I made this at Christmas and they were so simple and yummy! I couldn’t find peppermint extract so I used mint Oreos so they did have a good minty flavor. My family and I are not white chocolate fans so I used regular chocolate. I also did what someone mentioned and used crushed peppermint on half of them then used Andes mint on the other half. I did press toppings slightly so they wouldn’t fall off. I will definitely make these again next year!

A new holiday favorite! I’ll be making these for years to come. I swapped out mint Oreos for regular. I made half with crushed candy canes, and the other half with finely chopped Andes mints for chocolate lovers. You need to work quickly with the topping, because the white chocolate cools only after a few minutes!
