Ingredients
- 12 red potatoes, thinly sliced
- 1 1/2 pounds bulk Italian sausage
- 1 onion, chopped
- 4 cups low-sodium chicken broth
- 3 cups whole milk
- 2 cups half-and-half
- 1/2 teaspoon fresh or dried oregano
- 1/2 teaspoon red pepper flakes, or more to taste
- Salt and freshly ground black pepper
- Splash of heavy cream
- 2 bunches kale, picked over, cleaned and torn into bite-size pieces
Instructions
- Bring a medium pot of water to a boil. Add the potatoes and boil until they’re just starting to soften, then drain and set aside.
- In a large pot, crumble and brown the Italian sausage with the onions over medium heat, about 5 minutes. Drain as much of the fat as you can (blotting the surface with paper towels helps). Add the chicken broth, milk, half-and-half, oregano and red pepper flakes to the pot with the sausage and onions, bring to a simmer and simmer for 30 minutes. Give it a taste and adjust the seasoning as needed with salt, pepper and more red pepper flakes if needed.
- Add the potatoes and a splash of heavy cream for richness, then stir in the kale. Cover and simmer for an additional 10 minutes, then serve.

Fabulous. I did add mushrooms to the sausage onion mix just because I had them. We loved it and I will continue to make this soup.
My kids and I love this soup! My dad likes it too as long as the kale is chopped smaller. My daughter is making some for me for a late Mother’s day gift. I’m looking forward to it.
This is the best soup. That picture does it no justice at all. It’s the only soup I make where there are no leftovers for the next day.
I love this soup. Cannot stop eating it. I did add white wine. I saw someone added fresh nutmeg and will try that.
I made it as is except I sautéed fresh sliced mushrooms to add into the mix and replaced kale with spinach. Added two tablespoons of sherry and a dash of nutmeg for flavor. Delicious!
Wow! This was delicious. I did not have Italian sausage so substituted with well seasoned ground turkey. Perfect for a cold winter night. A must try. You won’t be disappointed.

I made this soup today! I didn’t have any kale in the fridge so I added 1/2 can of seasoned collard greens at the end instead!! It tasted delicious!
It was a very good and comforting soup! I will definitely make it again! I used more oregano and pepper flakes than the recipe stated because our family likes spicy food. Loved the ease of cooking everything in one pot!
