Tortellini Primavera

Ingredients

  1. 1 pound cheese tortellini
  2. 2 tablespoons salted butter
  3. 3 cloves garlic, minced
  4. 1 medium onion, finely diced
  5. 1 cup cauliflower florets (broken into small pieces)
  6. 3 carrots, peeled and diced
  7. 1 bunch asparagus, cut into pieces
  8. 1/2 cup chicken broth
  9. 1/2 cup grated Parmesan (powdered), plus more for serving
  10. 1/3 cup heavy cream
  11. 1 cup frozen peas
  12. 1 cup diced cooked ham
  13. Salt and freshly ground black pepper
  14. 12 fresh basil leaves, chopped or cut into chiffonade, plus more for serving

Instructions

  1. Bring a pot of water to a boil. Cook the tortellini in the boiling water for a couple of minutes less than the package directions call for. Drain and set aside.
  2. Melt the butter in a large skillet over medium-high heat. Add the garlic and onions and stir and cook for 1 minute. Add the cauliflower, carrots and asparagus and stir and cook 1 minute. Splash in the broth, then cook until the liquid reduces a bit, 2 to 3 minutes. Stir in the Parmesan and cream and cook until hot. Stir in the peas, ham and some salt and pepper and continue cooking to allow the peas and ham to heat up in the sauce. Add the basil and heat; stir in the tortellini. Check for seasoning, adding more if needed, and serve with extra Parmesan and basil.

Easy, rich and flavorful. I used broccoli and cauliflower in place of other veggies and prosciutto instead of ham. I also added a “flurry” of milk and cornstarch to thicken. Definitely will make again.

Easy, tasty, recipe. I was short on time and decided to use mixed frozen veggies and it turned out great. I also used pecorino cheese instead of parmesan for more flavor. I will make this again!

Easy to follow along and make. It was also very good. I just wish the sauce was thicker. I added flour, but it didn’t make a difference. I used zucchini, mushrooms, yellow bell pepper, and broccoli; and added the frozen peas. I might try to make the sauce separately to try and thicken it next time.

I agree that this recipe is very versatile and needs the sauce doubled. The sauce is definitely the star of this dish. Next time I actually think more vegetables and ham, and less pasta. I also think that tortellini over powers the dish, and it would be better suited with pasta shells. That way you can scoop up more of that delicious sauce!

Bland, even with addition of wine (per video). Made per recipe except I did not have ham, so added some fried bacon. Then found sauce to be watery, so added a small beurre manie (soft butter mixed with flour) to thicken it.
Needs more flavor-will double the basil next time, add some red bell peppers, more Parmesan, perhaps?

I made this last night and my family loved it. I did add the wine portion to the recipe and followed the the rest otherwise the way she made it and it was delicious definitely a keeper !!

Super easy to make and packed full of flavor. I found a mistake in the recipe. It says a cup of chicken. I did cut up a roasted chicken I had but then when I was cooking it said ‘splash the chicken broth… well I wound up adding the cut up chicken and splashed broth as well. All still yummy.

AWESOME and so easy to make.  Try it without the ham but definitely use the heavy cream 🙂
