French Toast Roll-Ups

Ingredients

  1. 1/2 cup packed brown sugar
  2. 1 teaspoon ground cinnamon
  3. 1/4 cup heavy cream
  4. 1/4 cup maple syrup, plus more for serving
  5. 1/2 teaspoon vanilla
  6. 4 large eggs
  7. 8 slices white sandwich bread, crusts removed
  8. 8 tablespoons salted butter, 4 tablespoons melted plus 4 tablespoons for frying
  9. 1/2 cup blueberry pie filling
  10. Confectioners’ sugar, for dusting

Instructions

  1. Mix together the brown sugar and cinnamon in a small bowl. Set aside.
  2. In a separate bowl, whisk together the cream, maple syrup, vanilla and eggs until well combined. Set aside.
  3. With a rolling pin, flatten 1 slice of bread. Brush with the melted butter, then sprinkle with 1 tablespoon of the cinnamon sugar. Spoon a line of pie filling along one of the short sides of the flattened bread. Starting with the pie filling side, roll the bread tightly, enclosing the filling in the middle. Set aside seam-side down and repeat with the remaining bread slices, butter, cinnamon sugar and pie filling.
  4. Heat 4 tablespoons butter in a large nonstick skillet over medium heat.
  5. Dip each French toast roll into the egg mixture, making sure to completely cover, then add to the skillet. Cook until browned on all sides, 3 to 4 minutes total.
  6. Remove to a plate and dust with confectioners’ sugar. Serve warm with extra syrup on the side for dipping.

Just made these with my grand daughters, absolutely wonderful we used cherry pie filling, then made more with Nutella and fresh strawberries. Awesome results, when we make them again we are talking about using fresh pumpkin will let you know how that goes.

Very good. I did double batch of sugar mix and a single batch of egg mix. Rolled 26 slices of bread and had leftover of both sugar mix and egg mix. Also, butter seemed to burn very easily and overbrown the rollups so I used a Tablespoon of butter to fry a batch then wiped out the skillet and used another Tablespoon and kept repeating. They came out much better that way.

My kids went crazy over these! Very good! Kind of like a cross between cinnamon rolls and French toast.  I did burn them a little on one side, so definitely don’t walk away while they’re cooking

These were SERIOUSLY AMAZING!!! We just made them for Dad for Father’s Day and they were a huge hit! We used cherry filling, but we just used the jelly part as the actual cherries were pretty big and wouldn’t have rolled well.  BEWARE, they cook SUPER FAST! I’m talking like 30 seconds a side, or less. 

It sounds like a lot of steps, but this turned out to be really easy and we all loved it!
Oh! Also, instead of doing 4 Tbsp of butter, we cooked in the leftover bacon grease which added a yummy salty component. 
Overall 5/5 and is now in my recipe book!
