Ingredients
- 2 pounds queso blanco-style processed cheese, such as Velveeta Queso Blanco, cut in 1/2-inch cubes
- 2 cans diced tomatoes and green chiles, such as Rotel
- 1 jar diced pimientos
- 2 jalapenos, seeded and chopped finely
- Tortilla chips, for serving
Instructions
- Add the cheese to a saucepan and melt over medium heat. Add the diced tomatoes and chiles, pimientos and jalapenos and mix. Pour into a chafing dish to keep warm.
- Serve with tortilla chips.

This recipe makes too much for my family, but halves very well. We make it all the time, not just at Christmas!
Great!! One can’t go wrong with this dip – make exactly as the above recipe. Or for a hearty dip add cooked and well drained hamburger. Always one of the first items eaten.
LOVED THIS!!!! I used it as a side dish with fresh tortilla chips when I made steak /chicken /shrimp fajitas for the family!! I also made Arepas for dipping in the cheese.Yum!

Not sure if it was my mistake which caused the disaster or not—heated it in a slow cooker warmer instead of on stove—and it remained a thin mess!
