Ingredients
- ¾ cup buttermilk
- ½ cup all-purpose flour
- ½ cup quick cooking oats
- 1 large egg
- 2 tablespoons vegetable oil
- 1 tablespoon white sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Instructions

- Heat a lightly oiled griddle or large skillet over medium-high heat. Pour 1/4 cupfuls batter onto the hot griddle. Cook until bubbles form on the surface, 1 to 2 minutes. Flip and cook until browned on the other side, 1 to 2 minutes more.

I split milk in half with oat milk, it should rest for 5 minutes before pouring to allow for oats to absorb liquid as I did not puree it just mixed it in a bowl
We loved this recipe…it will be our new staple for pancakes. I did make some changes. I used the more convenient instant buttermilk powder with water instead of the prepared and sometimes hard-to-find product. I also replaced the oil with melted unsalted butter to add more flavor. The final touch was the addition of cinnamon. As usual, the pancakes were served with fruit and whipped cream.

Simple, quick and very tasty. I’ve tried this a couple times. I used mixed essence instead of vanilla extract. I’ve added cinnamon powder, nutmeg etc. I even made the buttermilk using almond milk and vinegar and it still came out great. It is a good base recipe. Comes out perfect everytime.
In the pan right now smells good and was easy to make. My question is can I make a huge batch and freeze the cooked pancakes?
Very good. Cooked up fast without burning. Used very little oil in the pan for frying. Fluffy and yummy.
Very good but I will cut the sugar and put less ap flour and add more oats .
These pancakes were incredibly good. I loved the slight texture the oatmeal gave them. My husband prefers waffles, so I used this recipe to make waffles, too. They also turned out perfectly!

It was terrific. I did improvise on the buttermilk. I used a Can of evaporated milk.
These were excellent and will be our main pancake recipe on rotation from here on out! We love the texture added by the oats and it makes them much more filling. Our family of three (one a toddler) did “six” servings and I while it was enough, I may increase to 8. Substituted milk with vinegar for buttermilk and no issues!
I amended this recipe to make 16 servings for food storage. Replaced oats with oat flour, and eggs with egg powder. I also use a powdered buttermilk product from the grocery store in place of regular milk. I typically don’t add vanilla at all. Makes great pancakes. Even better with peanut butter smeared on them!

My new “go-to” pancake recipe. I added 1 T white vinegar to regular milk to sour it (set aside for 5 min), because I didn’t have buttermilk. I didn’t have quick oats, so I used regular oats, and ground it in a coffee grinder for 30 seconds. Also, I threw in a generous handful of fresh blueberries. Good without even adding syrup topping!
This is a wonderful recipe. Easy and doesn’t make too much for two. I sprinkled pecans on the top before I flipped them over. So many different flavors I can think to try. Thanks for the recipe.
