Ingredients
- 2 (15-ounce) cans cooked canellini beans
- 1 cup chicken stock
- 2 teaspoons chopped thyme
- Gray salt or course sea salt
- Freshly ground black pepper
- 3 cups all-purpose flour
- 2 tablespoons baking powder
- 2 teaspoons sugar
- 1 teaspoon gray salt
- 4 eggs
- 2 cups milk
- 6 tablespoons pure olive oil
Instructions
- Preheat waffle iron.
- Drain and rinse the canned beans. In a small pot combine the beans, thyme, and chicken stock. Season with gray salt and pepper and bring to a simmer for about 5 minutes over medium-high heat. Remove from the heat and allow to cool to room temperature. Meanwhile in a large mixing bowl combine the flour, sugar, baking powder, and teaspoon salt.
- Add the beans and their cooking liquid to a food processor and pulse to puree. Add the eggs, milk, and olive oil to the bean mixture and puree until smooth. Whisk the wet mixture into the dry slowly to avoid any lumps. Let the batter rest briefly and griddle the waffles according manufacturer’s instructions.

I substituted water for the chicken broth and used vanilla soy milk for milk. I omitted the thyme and pepper. I used one can black beans and one great northern beans. So delicious !
I loved these waffles! I serve them with rotisserie chicken and green beans. It’s a healthier version of chicken and waffles! Yumm!
You need to top the waffles with Michael’s Asparagus and leeks with pancetta and the egg en cocotte. You were right, you need another savory addition to the waffles and this is it. I’ve made it and it’s great. I also added a simple hollandaise, but you don’t have to.
I tried making these waffled for dinner tonight and although they were fluffy and looked great, they were just okay. I didn’t see the episode these were from, so I’m not sure what he topped his waffles with, but I topped ours with a saute of caramelized onion, french green beans and prosciutto. Really seemed like they were missing a flavor component, but maybe they just need a different savory topping.
My husband and I enjoyed these very much. They were great with sauteed asparagus, leeks, and pancetta on top, served with poached eggs. As my husband said, “These are good enough for company!”

The ingredients sounded interesting espcially for waffles, but I tried the recipe for the first time this weekend and they are fantastic! It’s a great way to get your family to eat heart-healthy beans and not fuss about it. The recipe can easily become a “sweet waffle” with some suger and vanilla if you want. I froze the extra and they warmed up great for a quick breakfast or mid-day snack.
These were very good and not hard to make. Definitely worth trying.
