Roasted Baby Potatoes with Rosemary

Ingredients

  1. 2 pounds small potatoes, baby Yukon gold or red skin potatoes
  2. 6 cloves garlic, cracked away from skin
  3. 2 to 3 tablespoons extra-virgin olive oil, enough to just coat potatoes
  4. 2 tablespoons fresh rosemary leaves, chopped
  5. Salt and freshly ground black pepper

Instructions

  1. Preheat oven to 450 degrees F.
  2. Halve potatoes and place on a cookie sheet. Combine with cracked cloves of garlic. Coat potatoes and garlic with extra-virgin oil and season with rosemary, salt and pepper.
  3. Place potatoes on center rack of oven and roast 20 minutes, until just tender.

I put everything in a bowl and toss, then roast. Not sure what “cracked away from skin” means for the garlic, I just mince it.

This recipe was great and quick for baby roasted potatoes.  I cut in quarters and they came out perfectly in 20-23 minutes.  For those commenting on burning the garlic and rosemary; I took a quarter cup of canola oil and simmered my garlic cloves and 2-3 sprigs of rosemary and infused the oil for about 30 minutes before hand.  Enjoy!

1) regular olive oil works fine too; 2)try steaming or putting the potatoes in a pressure cooker , then roast them in the oven.  Nice texture for a variation.

This recipe is easy, flavorful and quick.  Definitely will go in my rotation.  May need to increase oven time depending on how big your potatoes are.  I checked after 20 minutes and let them go another 5 min.  They were perfect!

I used baby potatoes and only had to cut them in half. I placed the olive oil and seasonings on a bowl then added the potatoes to coat them. I only had to roast them for 20 minutes. My hub and I loved them. This recipe is a keeper.

These are excellent potatoes. Some minor changes. I preheated my oven using the convection setting. I also cut the potatoes in quarters. I chopped the garlic and put all the ingredients in a bowl and tossed the potatoes to coat. Lastly, I put the potatoes on a racked cookie sheet. Yum!

I was inspired by this recipe. I used roasted garlic infused grape oil . Also I added a pinch of thyme/ (or savory),I also boiled the potatoes first before baking them. It was delicious, great side dish for a steak as well as fish. I also had grilled zucchini as an additional veggie side dish! So, gooood! I garnished the potatoes with fresh dill..

Easy to make.  I also would recommend cutting potatoes in half, put in plastic bag with the rest of the ingredients, shake (to cover potatoes) and then put on cookie sheet.
