Ingredients
- 1/2 cup unpopped corn kernels
- 1/4 cup white sugar
- 1/4 cup vegetable oil
- 1 teaspoon chipotle powder
- 1 teaspoon salt
Instructions
- Place popcorn, sugar, oil, chipotle and salt in a large kettle or pot with a tight fitting lid over medium heat. When corn begins to pop, shake the pot constantly. When popping slows, remove from heat and transfer popped kettle corn to a bowl.
- To keep the kettle corn sweet, omit the chipotle powder and adjust sugar to 1/3 cup.

Literally my day would have been so much better had I not made this recipe. I followed the instructions perfectly and was left with burnt kernels coating my pot. By the time some of them popped, most of them were completely burned in a big mess. I have my pot soaking in my sink right now hoping it will loosen the kernels. Why even post this recipe? Does the size of the pot matter- if so, why not mention it? No amount of shaking kept this from cementing to the bottom of my pot. I think this is the first time I’ve ever been so upset with a recipe that I left a one star review.
What a disaster this was! I had some popped corn mired in a semi-burned sugarish-oily mess. I salvaged what I could, and threw the rest away. What a waste of time. All I have to remember this recipe by is a burnt pan. Thanks, Rachel
I omitted the chipotle pepper and it was great! Just like the kettle corn you can buy at the store. I also made the kettle corn festive for St. Patrick’s Day by adding a few drops of green food coloring to the sugar and oil before I popped it, I came out with green popcorn! Thanks for such a yummy recipe!
its really good the bigger the pot the better make sure the corn is in one layer on the bottom of the pot and it depend on how hot your stove is on gas set the heat on med low once it starts popping shack it once it slows popping take it off the heat but leave the lid closed and shake till it stops popping and its done we added cinnamon, and vanilla to ours
I was in the mood for sweet and salty:-) so I adjusted the sugar to 1/3 cup. Also, I subbed 3 of the Tblsp of oil with butter. The taste was delicious! crunchy sweet and salty..yum!
I definitely don’t like the pepper added, but I love the sweet regular kettle corn. Also, the way I do it, is put oil in a dutch oven and add three kernals. When they pop, I add sugar. stir it around for like ten seconds, pour in the rest, then three seconds of shaking and three seconds still over the pot. Works perfectly every time.
I tried RR’s kettle corn, but the 1/4c of oil just fried the 1/2c of popcorn and the sugar carmelized! I had to throw out the whole pot, but will try again with a lot less oil and see if that will solve the problem. Oh, and I shook the pan continually until my arms were exhausted. No popcorn for me this night!

l don’t know how everyone else got it to work….that sure didn’t for me!!! h-m-m-m.
I don’t like any of Rachael’s recipes. Every one I have tried prior to this is average at best. My Dad recommended this so I decided to try it. It is sooooo good. I combined all ingredients in an old fashioned hand cranked popcorn maker. I made sure to stir continuously. I used coconut oil so I had to let that melt then I took off the burner and added everything but not a full tsp of salt. That is way too much for me. I used about 1/4 tsp. Will make repeatedly. Finally a good recipe.
