Wild Rice Salad

Ingredients

  1. 1 (6-ounce) package long-grain and wild rice
  2. 2 tablespoons lemon infused olive oil
  3. 1/2 orange, zested and juiced
  4. 2 green onions, white and green parts
  5. 1/2 cup grape tomatoes
  6. Kosher salt and freshly ground black pepper

Instructions

  1. Prepare the rice according to package directions without the package of seasoning. Set aside to cool to room temperature.
  2. In a large bowl combine the onions and tomatoes. Whisk together the oil, orange zest and juice and salt and pepper, to taste, in a small bowl. Pour the oil mixture over onions and tomatoes and add the cooled rice. Toss to combine, then cover the bowl and refrigerate until ready to serve. Can be served cold or at room temperature.

Great dish!!! and so simple! ?Used Uncle Bens long grain rice mix, and did put in the seasoning packet by mistake…but turned out great with 2 T olive oil and 2 T lemon juice. Kosher salt a must…really gives such an added something.

This is a great recipe! I double it by simply making 6 ounces of white rice and 6 ounces of wild rice separately, mix them in a bowl, and double the remaining ingredients. As a previous review suggested, I used lemon juice and zest instead of orange. This has become one of the most requested dishes I make by our friends!! Give it a try!!

I didnt like it all which is surprising because I love all of her recipes. I didnt have oranges so I substituted orange juice instead of fresh oranges…maybe that is why it didnt turn out so good?

I substituted lemon juice and zest for the orange (not a fan of the sweetness of the orange. It was DELICIOUS!!!! Next time I think I’ll add some fresh thyme and parsley for a more earthy flavor. Claire, thanks for the stepping stones for such yummy dishes!

I loved this recipe and it wasn’t posted originally. I am glad FN added this to Claire’s site. I don’t enjoy tomatoes but this recipe made them tastier and I am glad because I know they are good for you.

I also noticed Claire hasn’t been on during her regular time….I love 5 Fix and will be heart broken if she goes off the air. What is going on? I tell everyone about her and her recipes but will not know what to do if she doesn’t continue to air on FN.

First time for me to view Clair ‘s program & only got to see part of it. I couldn’t wait to to tell everyone how great the reciped looked and how well it was presented. I was very impressed by Clair’s presention. I, like some of you ,I didn’t know her name, but now that i have it & all of the recipes for 7/25/11, I can’t wait to start cooking….. Love your reviews with the helpful hints. I to have never eaten goat cheese, but willing to try it now. I am giving it a 5 star rating on the presention alone & Im sure it would also be true for the food.
