Ingredients
- 1/2 (16-ounce box) rotini pasta
- 1/2 cup creamy Caesar salad dressing
- 1 lemon, zested and juice
- 3 tablespoons chopped parsley leaves
- 1/4 cup grated Parmesan
- Freshly ground black pepper
- 1 cup garlic croutons
Instructions
- Bring a large pot of salted water to a boil over medium heat. Add the pasta and stir gently. Boil uncovered, stirring occasionally until al dente, about 8 minutes. Remove from the heat. Drain well and rinse with cold water.
- In a large bowl, combine the Caesar dressing, lemon zest, lemon juice, parsley, Parmesan and pepper. Add the croutons, and cooked cooled pasta. Mix until all of the pasta is coated with the dressing. Transfer to a serving bowl and serve. This pasta salad can be made a day ahead, just reserve the croutons and add them 15 minutes before you are ready to serve.

Used gluten free pasta so daughter-in-law could enjoy. I did use shaved parm, only used the lemon juice. Everyone loved. Did make again using same but also adding black beans & chopped peppers. Family loved even more.

My husband usually makes this for dinner parties and it’s always a hit. I made it tonight and i doubled the recipe. I used 2- 24 oz boxes of the colorful rotini noodles (the store was out of the plain) and one bottle of dressing is a little more than a cup so I just used the whole bottle to compensate for the extra noodles. I also added more shredded cheese, and used just one lemon. I also added chopped chicken breast from the deli. It turned out REALLY good. Whether you follow it exactly or not, this is just a really good recipe. Thank you for posting this dish! Oh, and the kids love it too.
I added frozen peas, chopped black olives went 1 tsp lemon zest, not one lemon zested, also fresh parsley, can’t make pasta with no parsley, turned out really great.
One of my favorites. Very easy and quick! I add Romaine lettuce to make it more of a salad.
Tangy and delicious! I whipped this up in very little time and have just made the second batch. I even added some chicken the first time.
