Ingredients
- 1 quart buttermilk
- 1 tablespoon lemon zest (from 1 lemon)
- 4 boneless skinless chicken breasts, tenders removed, cut in strips
- 2 cups all-purpose flour
- 1 cup cornstarch
- Vegetable oil, for frying
- 1 (11-ounce) jar lemon curd
- 1/4 cup chicken broth
- 1/4 teaspoon ground ginger
- 1/2 teaspoon soy sauce
Instructions
- Add enough oil to cover the bottom of a large frying pan by 1/4 to 1/2-inch depth. Heat oil to 365 degrees F.
- Meanwhile, whisk buttermilk and zest together in a medium bowl. Add chicken and set aside. Sift together flour and cornstarch into a shallow dish. Remove chicken from buttermilk mixture and dredge in flour mixture. Fry chicken strips until golden brown, about 4 to 5 minutes. Carefully flip chicken and continue cooking another 3 to 4 minutes. Drain on paper towels.
- While chicken is frying, make the sauce. In a small saucepan over low heat, melt lemon curd, stirring constantly. Add remaining ingredients and heat through. Drizzle sauce over chicken and serve.

very good!! my husbands new favorite dish!! 🙂 btw he’s a picky eater!! lol!!!
Sooo delicious!!!
love taste and love the simplicity!
My husband adores this dish. It’s easy and it is elegant enough to serve to company. I made a double recipe for a dinner party and the men ate seconds and thirds until it was all gone!
This is probably one of my favorite SL dishes. I made this for a little dinner party with four of my girlfriends and they loved it. Really good tasting and an elegant dish.
when looking for lemon curd, try trader joes if you have one in your area. theirs is awesome, and inexpensive compared to most grocery stores. what’s in the grocery store could be goodness knows how old sitting on the shelf!!! the lemon curd is also very good warmed up and poured on top of ginger bread or mixed in with plain yogurt.
Me and my best friend love this recipe so much this is like one of r fav. dishes!!!
YUMMMY….. thats all i can say ….
This was very easy to make. The only thing I did differently was I did not have any lemon curd on hand so, instead, I used the lemon I got the zest from and squeezed the juice out of it. I used 2 lemons to make the lemon juice. Otherwise, preperation was easy and the sauce was still good. I could taste the ginger and soy sauce but because I did not have the curd the lemony taste was a bit weak. Next time I go to the store, I am going to buy the lemon curd and keep it so next time I make it, I can use it. I looked at Walmart, but I didn’t know what lemon curd even was and I looked it up online and it says Kroger has it near me. All in all, I felt it was a fairly easy recipe and I am not the biggest cook. I rarely use recipes because I never had the ingredients on hand.
I have made this recipie for many, many times. Its really good!
