Ras al Hanout Crusted Seared Salmon

Ingredients

  1. Grapeseed oil
  2. 4 (6-ounce) salmon fillets, skin removed
  3. 4 tablespoons whole allspice
  4. 4 tablespoons toasted cumin seeds
  5. 8 tablespoons black peppercorns
  6. 4 tablespoons ground cardamom
  7. 2 tablespoons cayenne pepper
  8. 4 tablespoons ground cinnamon
  9. 2 tablespoons ground cloves
  10. 6 tablespoons toasted whole coriander
  11. 2 tablespoons ground ginger
  12. 2 tablespoons ground mace
  13. 2 tablespoons ground nutmeg
  14. 6 tablespoons turmeric
  15. 2 tablespoons dried thyme
  16. 5 bay leaves

Instructions

  1. Grind all ingredients in a coffee grinder or with mortar and pestle. Heat 1 tablespoon of oil in a saute pan. Season fish with salt and pepper and roll in spice mixture, using just enough to lightly coat fillets. Reserve remaining spice mixture in airtight jar for several months. Sear over medium high heat for 3 minutes with skin side up, turn and cook and additional 3 minutes, fish should be medium rare.

I love Ras Al Hanout so much that I have a homemade mixture in the cabinet at all times, to use on chicken and in stews. My family loved this recipe, however, I do not like salmon. I try and eat it for its health benefits, but I don’t like it cooked. I can enjoy salmon as sushi.
