Crawfish Pie

Ingredients

  1. 1/4 cup butter
  2. 1/4 cup flour
  3. 1/3 cup minced onion
  4. 1/2 cup minced bell pepper
  5. 1/4 minced celery
  6. 1 cup heavy cream
  7. 3/4 cup green onion chopped
  8. 1 teaspoon garlic, minced
  9. 1 pound crawfish tails, taken out of the shells
  10. Spice Mixture, recipe follows
  11. Store bought 9-inch pie crust, blind baked
  12. 1 1/2 teaspoon salt
  13. 1 teaspoon paprika
  14. 1/2 teaspoon white pepper
  15. 1/4 teaspoon onion powder
  16. 1/4 teaspoon garlic powder
  17. 1/4 teaspoon dry mustard
  18. 1/4 teaspoon cayenne pepper
  19. 1/4 teaspoon black pepper
  20. 1/8 teaspoon thyme leaves
  21. 1/8 teaspoon basil leaves

Instructions

  1. Make a brown roux with butter and flour, mix in the minced vegetables to cool, add cream to thin, if needed.
  2. In skillet saute green onions, garlic and butter. Add crawfish tails and heat well. Sprinkle with 1 1/2 tablespoons of spice mixture. Add this to the roux, cream mixture and create consistency desired (not soupy or too thick).
  3. Pour the hot crawfish mixture into the pie crust and serve hot.
  4. Mix ingredients in a bowl and store in an air tight container.

The only reason this recipe didn’t get a 5 is because I had to tweek it a little bit. I’m from Louisiana and I love crawfish pie, but I’ve never seen one that wasn’t baked! I didn’t bake the pie crust and I kept the mixture on the thick side. I topped it w/ bread crumbs and baked it until golden. It was really good and even better the next day!

This recipe was easy to follow. The thing that most people mess up is the Rue but this was an excellent recipe. The green onion offerred great flavor.
The only reason this recipe didn’t get a 5 was because there was an abscense of garlic in the flavor. Crawfish pie just excellent so unless you can taste, at least a hint, of garlic.
