Easy Breaded Baked Chicken Breast

This is how I make breaded chicken using seasoning blend, like Pepperidge Farm. Butter is a crucial component and adds a lot of flavor; do not omit it.

Ingredients

  1. 6 ounces sour cream
  2. 2 teaspoons lemon juice
  3. 2 teaspoons paprika
  4. 1 (14 ounce) package dry stuffing mix (such as Pepperidge Farm® Herb Seasoned Stuffing)
  5. 8 thin chicken breasts
  6. ½ cup butter

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Combine sour cream, lemon juice, and paprika in a bowl until well combined. Place stuffing mix in a shallow bowl. Dip chicken breasts into sour cream mixture so both sides are covered, then dip into seasoned stuffing mix on both sides. Roll each chicken breast up and place into a glass baking pan.
  3. Melt butter in a saucepan over medium-low heat and drizzle over chicken breasts in the baking pan.
  4. Bake in the preheated oven, until chicken breasts are no longer pink in center and outside, is browned, and juices run clear, 45 to 60 minutes. An instant-read thermometer inserted into center should read at least 165 degrees F (74 degrees C).

I ended up making my own version of this recipe after I had started to put it together. I hope the following will help those who try to make it. I suggest you make the stuffing instead of using it in the dry form as the recipe indicates. Moist stuffing will adhere to your chicken better than dry. I also didn’t add drizzled butter because the stuffing has butter in it. In addition, I put mozzarella cheese and a half of slice of bacon inside each chicken roll. I also used a tooth pick to secure the rolled up chicken.

I loved this recipe! So good! I did do an additional dip into dry instant mashed potatoes after dipping into bread crumbs, but otherwise I followed the recipe! Super yummy! Thank you for sharing this recipe with me!

This is good. The one thing I will say is that the recipe calls for 8 think chicken breast. No such cut. Butterfly your breast and pound them out. That is the only way you will get them to roll. On that note, cheese or something melty would have been good in the middle. Overall good recipe but you could turn these from good to great with a few tweaks.
