Ingredients

  1. 1 pound fresh linguine
  2. 1 to 2 ounces olive oil
  3. 12 ounces salted butter
  4. 3 cups clam juice
  5. 3 cups diced tomatoes
  6. 2 cups chopped green onions
  7. 1 pound baby shrimp
  8. 1/2 cup white wine
  9. 1 cup black olives

Instructions

  1. Cook linguine in boiling salted water until al dente. Drain and stir 1 to 2 ounces of olive oil into linguine to help prevent pasta from sticking together and set aside. In a large saute pan, combine the butter, clam juice, tomatoes, green onions, baby shrimp, white wine, and black olives. Place on high heat, and cook, stirring occasionally. When butter melts, cook for 5 more minutes. Add the pasta to the mixture and toss to heat through.

I made this dish in 30 minutes and it has the taste of a slow cooked Sunday meal Mom used to make. I did cut the butter amount in half. Also, for cost reasons, I used only half clam juice and the rest chicken broth. I served with a loaf of garlic bread for dippping and it was perfect. One of my fiances favorite meals I cook for her.

I cut back the butter by 1/2 and allowed it to brown a little. I also cut back on the olives, and removed the veggies & shrimp to boil/reduce the sauce. EXCELLENT!

Well my daughter and wife rated this meal a 9.5 out of 10. (They said I didn’t serve enough shrimp.) This was wonderful, flavorful, and easy to prepare. I loved the buttery richness of the clam sauce. It is absolutely perfect for anyone who loves seafood and pasta!

This recipe was very easy and inexpensive to put together…doesn’t take a chef!! I took about 30-40 min. to prepare and about 15 min. to serve. I made it for my girlfriend and she loved it. A bottle of white wine accompanied this meal perfectly.
