Ingredients

  1. 1 tablespoon olive oil
  2. 1 onion, chopped
  3. 2 cloves garlic, finely chopped
  4. 1 stalk celery, chopped
  5. 1 carrot, peeled and chopped
  6. 1 tablespoon dried basil
  7. 2 teaspoons dried oregano
  8. Dash of red pepper flakes
  9. 1 1/2 cups chopped whole tomatoes, with juices
  10. 3 cups low-sodium chicken stock, or vegetable stock
  11. 1 can northern white beans, drained and rinsed
  12. 1 cup tiny pasta shells (ditalini)
  13. 2 tablespoons fresh chopped parsley
  14. Freshly grated Parmesan and black pepper for garnish

Instructions

  1. In a large heavy pot, heat olive oil over medium high heat. Stir in onion and cook for 2 minutes. Stir in garlic, celery, and carrots and cook for 3 minutes. Add dried basil, oregano, and red pepper flakes and toss to coat. Stir in tomatoes and stock and bring to a boil. Reduce heat and simmer for 30 minutes. If necessary add an additional cup of stock or water and stir in beans and tiny pasta. Simmer for 6-8 minutes or until pasta is tender. Stir in parsley and serve hot with grated Parmesan and ground black pepper.

I added half Italian sausage and ground beef. It was perfect this way. My hubby threatened to eat the whole pot in 1 setting.lol

Super easy! I added 50/50 chicken stock and beef stock as well as red wine to deglaze the cooked vegies! Simmered for an hour. Cooled and put in fridge. Next day heated, added beans & pasta. Everyone loved it and thought I cooked all day!

How many servings does this make? Cause I don’t see it.

I saute milde Italian sausage and add to the soup before I simmer it. The flavors complement each other and it make the soup heartier. I also use spinach instead of arugula, as my wife and I both prefer the taste.

I use Spicy Johnsonville ground sausage, tomato sauce and V8. Not broth. More carrots and celery. I do not add the pasta while cooking. I use cooked ditalini individually when soup is served. Love this soup. Hearty.
