This blueberry-banana bread is delicious. My grandson, age 2, adores it. It works well for breakfast.

Ingredients
- ½ cup unsalted butter, at room temperature
- ¾ cup white sugar
- 2 large eggs
- 4 ripe bananas
- 1 teaspoon pure vanilla extract
- 2 cups unbleached all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×5-inch loaf pan.
- Beat butter in a large bowl until nice and creamy. Add sugar and mix until smooth. Add eggs one at a time, mixing until blended. Mix in bananas and vanilla extract.
- Sift flour, baking soda, and salt together in another bowl. Mix into the banana mixture and fold in blueberries. Pour into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Remove from the oven and let sit in the pan for 10 minutes before turning out onto a plate.

I followed the recipe exactly and I was left with a wonderfully moist and yummy loaf of bread. Had 4 bananas and some blueberries I needed to use up and glad I found this recipe! Will be making again
7.25.20 Baked these in three small loaf pans for 35 minutes @ 350ºF. Just a comment for new cooks…recipe doesn’t tell you to do this, but be sure to mash your bananas before adding. The only thing that I would change in the future would be using 3 bananas instead of 4. I’m not convinced that fourth banana added a a lot more to the flavor, but that additional moisture did affect the texture. But also, my bananas were fairly large, and that may have made a difference. We enjoyed this for a lazy weekend breakfast. Thanks for sharing your recipe.
