Mini Corn Dogs with Homemade Mustard

Ingredients

  1. 8 cups canola oil
  2. 1 cup yellow cornmeal
  3. 1/2 cup all-purpose flour
  4. 1 tablespoon sugar
  5. 2 teaspoons baking powder
  6. Kosher salt
  7. 2 large eggs, lightly beaten
  8. 3/4 cup buttermilk
  9. 8 hot dogs, cut in half
  10. Homemade Mustard, recipe follows, or store-bought, for serving
  11. 1 cup mustard powder, such as Colman’s
  12. 1/2 cup honey
  13. 2 tablespoons cider vinegar
  14. 1/2 cup brown mustard seeds, toasted

Instructions

  1. Fill a Dutch oven or other heavy pot with the canola oil, and heat to 350 degrees F. Line a plate with paper towels.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder and 1/4 teaspoon salt. Add the eggs and buttermilk, and stir to combine.
  3. Working in batches, dip each hot dog in the batter to coat, let the excess drip off, and then fry until golden, 3 to 5 minutes. With a slotted spoon, transfer the corn dogs to the paper-towel-lined plate to drain.
  4. Serve with mustard.
  5. Add the mustard powder, honey, vinegar, mustard seeds and 1/3 cup water to a mixing bowl. Stir to combine. Transfer to an airtight container and refrigerate for up to a month.

This is just a review for the mustard. Very good except I think that perhaps there is a typo in the recipe. I would use 1/2 of a cup of mustard powder and 1 cup of honey. Tastes way too hot when first made. Needs to mellow in the refrigerator for a few days to really get the flavor vs just heat. Don’t try to taste if straight off of a spoon. Use a hotdog or corndog. It needs some other flavor with it to really appreciate it. Great mustard. Of the 8 mustards my siblings and I made this was our favorite.

I halved the recipe.  So much easier than it looks.  Just make sure your batter is not too thick.  I ended using a little than half of the buttermilk.  These were delicious!
