Apple and Pear Fruit Salad with Honey-Lime Vinaigrette

Ingredients

  1. 3 apples, chopped
  2. 3 pears, chopped
  3. 2 peaches, pitted and chopped
  4. Juice of 2 limes
  5. 1/4 cup honey
  6. 1/4 cup fresh mint leaves, torn

Instructions

  1. Add the apples, pears and pieces to a large bowl. Squeeze the juice from the limes over fruit. Add the honey and mint leaves, and toss it all together to coat. Serve immediately or chill until ready.

This is so easy and absolutely delicious.! I love not having to peel the fruit before hand.. I made a smaller amount and used 2 apple, 2 pears, and one peach. I didn’t have fresh mint, but it still was super fresh tasting. I will definitely make this again. Great side dish for summer fruit!
