Baked Parmesan Carrot Fries with Lemon-Basil Aioli

Ingredients

  1. 1 cup mayonnaise
  2. 1/4 cup fresh basil leaves
  3. 1 lemon, zested and juiced
  4. 1/2 clove garlic, finely grated
  5. Kosher salt
  6. Nonstick cooking spray, for the wire rack and carrots
  7. 1 1/2 cups panko breadcrumbs
  8. 1 cup grated Parmesan
  9. 1 tablespoon dried parsley
  10. 1/8 teaspoon cayenne
  11. Kosher salt
  12. 1 tablespoon milk
  13. 3 large eggs
  14. 4 medium carrots, cut into thin 3-inch batons
  15. 2 tablespoons all-purpose flour

Instructions

  1. For the aioli: Combine the mayonnaise, basil, lemon zest and juice and garlic in a blender and blend until almost smooth. Season with salt. Transfer to a bowl and refrigerate until ready to serve.
  2. For the carrot fries: Preheat the oven to 425 degrees F. Fit a large baking pan with a wire rack and spray the rack with cooking spray.
  3. Mix together the panko, Parmesan, parsley, cayenne and 1/2 teaspoon salt in a wide shallow bowl. Whisk the milk and eggs together in another shallow bowl.
  4. Toss the carrots with the flour. Working with a few carrots at a time, shake off the excess flour, then dip them in the egg. Let the excess egg drip off, then toss them in the panko mixture, patting them so the crumbs adhere. Arrange them on the wire rack in a single layer.
  5. Spray the coated carrots thoroughly with cooking spray, then bake until golden brown and crisp-tender, 10 to 15 minutes.
  6. Serve the carrot fries with the aioli for dipping.

Good. But microwave the carrots in water for a few minutes. I used fresh parm but put it in my spice blender.

This is an excellent foundation for this recipe. I made a few changes. Instead of AP flour I used rice flout. I added salt and white pepper to the flour. To the panko mixture I added garlic powder and paprika. I made the aioli with Greek yogurt instead of mayo. Really enjoyed these fries. I also enlisted the help of the children when making these.

Loved the carrots!! I didn’t make the aioli because I had picked up a jar at Aldi’s but I’m sure homemade is better.
