Spicy Tuna Tartare

Ingredients

  1. 1 tablespoon mayonnaise, such as Kewpie
  2. 1 tablespoon reduced-sodium soy sauce
  3. 1 1/4 teaspoons sriracha
  4. 1/2 teaspoon grated garlic
  5. 1/2 teaspoon grated fresh ginger
  6. 12 ounces sashimi-grade tuna, cut into 1/4-inch dice, chilled
  7. 2 Belgian endive, leaves separated
  8. 2 tablespoons drained, julienned Pickled Radishes, recipe follows
  9. 2 tablespoons finely chopped chives
  10. 1 cup hot water
  11. 1/2 cup rice wine vinegar
  12. 1 tablespoon granulated sugar
  13. 1 1/2 teaspoons kosher salt
  14. 1 teaspoon honey
  15. Cracked black pepper
  16. 10 radishes, thinly sliced

Instructions

  1. In a medium bowl, whisk together the mayonnaise, soy sauce, sriracha, garlic and ginger. Add the tuna to the sauce and gently stir to coat. Adjust seasonings.
  2. To serve, top each endive leaf with about 1 tablespoon of the crudo, some Pickled Radishes and a sprinkle of chives. Serve immediately.
  3. In a glass measuring cup, add the hot water, vinegar, sugar, salt, honey and some pepper. Stir until the sugar and salt dissolve. Add the radishes to a glass jar and pour the pickling liquid over them. Set aside to pickle for 1 hour. After 1 hour, cover the jar and refrigerate.

Loved this. Made a tuna stack with wontons. Didn’t do the radishes had pickled ginger. Very tasty and light for a hot mid west night.

I made this last nice it is delicious my son and I love fresh tuna
Must be sushi grade.
I did not use the pickled radishes I had pickled ginger and pickled red onions on hand.
Next time I will use wontons, just because I love them
