Sweet Potato Hash

Ingredients

  1. 3 strips bacon, chopped
  2. 3 tablespoons olive oil
  3. 2 medium sweet potatoes, about 8 ounces each, peeled and 1/4-inch diced
  4. 1/2 cup chopped red onion
  5. 2 cloves garlic, thinly sliced
  6. 1 tablespoon pickled jalapenos, chopped
  7. 1/2 teaspoon ground cumin
  8. Salt and freshly ground black pepper

Instructions

  1. In a 13-inch saute pan over medium-high heat, add the bacon and olive oil. When the oil heats and the bacon begins to sizzle, add the sweet potatoes and spread out as much as possible to allow the potatoes to rest in the pan in 1 layer. Leave the potatoes to cook until a quick toss reveals browning on the side in contact with the pan, about 5 minutes. Continue to toss and let stand until most sides of the potatoes are golden and the bacon bits are crisp, 3 to 5 minutes longer. Then add the onions, garlic, jalapenos, cumin and season with a nice pinch of salt and a grind or 2 of pepper. Cook the same way, allowing everything to sit in the heat of the pan for a minute or 2. Taste and re-season if necessary.

i decided to try this recipe because I wanted to do something different with sweet potato and my husband LOVES bacon. I used almost a whole pack of bacon. This dish was a big hit. But there was still something missing. my husband put a small amount of honey on it and BAM!! That was it. I will be making this again. Instead of honey I may add brown sugar or syrup to the pan.

Good dish which I turned into a main course. I had leftover pork roast and added that in at the last moment, just to heat up, and had a one pot meal. I think this would work nicely also with a hearty turkey sausage. I agree with other reviewers that the jalopeno and sweet potato married perfectly.

Made this yesterday as a breakfast side dish, along w/ Sunny’s cheesy scrambled eggs. LOVED IT and so did my friend. I decided to leave the skin on the sweet potatoes, but I wouldn’t do that next time as the skin burned a bit. I also added 1 additional piece of bacon (4 pieces instead of 3 and I might even add a little more next time to really get that bacon flavor going move throughout it. But the jalapeno was a perfect element and the caramelization of the whole dish was perfect. Will definitely make this again– may even use it as a Thanksgiving side!

Outrageously good! I served this with smoked chicken-apple sausages and sweet-sour red cabbage for a great fall supper. A Lakefront Brewery Pumpkin Lager completed the meal.
