Ingredients

  1. 10 slices American cheese
  2. 1 loaf sliced white bread (about 20 slices)
  3. 3/4 cup mayonnaise
  4. 2 tablespoons adobo sauce, from a can of chipotles in adobo
  5. Kosher salt and freshly ground black pepper
  6. 1 head Boston lettuce, separated into leaves
  7. 20 slices cocktail tomatoes (2 per sandwich)
  8. 1 1/2 pounds store-bought carved turkey
  9. 1 avocado, sliced
  10. 7 slices cooked bacon, cut into thirds1 avocado, sliced
  11. Sea salt
  12. Extra-virgin olive oil, for drizzling

Instructions

  1. Use a small round cookie cutter to cut circles out of the cheese and bread. (You may also use the rim of a small glass to create the round shape; aim to get 2 circles out of each piece of cheese.) Toast the bread until lightly toasted.
  2. In a small bowl, combine the mayonnaise, adobo sauce, and salt and pepper to taste. Stir with a spoon until combined.
  3. Assemble the sandwiches: Start by spreading the bread with the chipotle mayo; layer with a lettuce leaf (torn to match the size of the bread), 2 slices of cheese, 2 slices of tomato, some turkey, a slice of avocado and a piece of bacon. Top with a second slice of bread and skewer with cocktails forks. Sprinkle with a pinch of sea salt and drizzle with olive oil.
