Ingredients
- 2 pounds cherry tomatoes
- 3 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground black pepper
Instructions
- Heat the oven to 400 degrees F.
- Place the tomatoes on a sheet pan, drizzle over the olive oil and season with salt and pepper. Roast until the tomatoes collapse, about 10 minutes.

I ended up with so many cherry tomatoes this year. Must be all the rain. This was a super simple recipe and you can do so much with these little yummies. I tried them hot from the oven and decided to finish with sherry vinegar and put them back in the oven after I turned it off. While waiting, I made some garlic toast from a loaf of sourdough I got from the bakery. Then I mixed just a smidge of herbed goat cheese with a tittle of mascarpone, and spread it on the bottom of the toast, then finished with these little tomato jewels. Yummy! lunch while working from home after I spent most of my lunch hour in the backyard garden. Thanks for this inspiration. Now what else can I put these on?
I tossed my garden cherry tomatoes with some cheese-less garlic scape pesto. Simple, delicious!
What to do with so many cherry tomatoes from the garden? This was an absolutely perfect solution and easy to do. I tossed them with some pasta, fresh basil,cheese, more evoo, but couldn’t help snacking on them while cooking the pasta. I needed a little more than 10 minutes for them to finish, but the flavor really intensifies this way.
I made this as an extra side dish for Tyler’s Chicken Marsala recipe. I am use to cooking with a lot of different herbs so this seemed to be missing a little something. However, I just threw the extra tomatoes into my vita-mix with some seasoning and vola instant tomato sauce! Yummy!
I’ve just made another batch of these. I had tomatoes that were a little too acidic so roasting them this way makes them more usable. Great on a salad, in pasta, as a garnish. Just tons of uses, and they always have great flavor when roasted this way.
Loved how it paired with every other recipe in this episode.
This recipe was very bland – would have to really spice it up if I try it again in the future
these tomatoes are amazing and so very simple. add oregano and strain them through a strainer or food mill and you have a delicious tomato sauce
The minute I saw Tyler making this I had to get some Cherry tomatoes. Everyone should make try this. I made this twice in one week and added some shaved parmesean cheese. What a treat. Excellent with steak and white wine.
Although my family is not partculary fond of tomatoes, they found this recipe at least tolerable. I, however loved them!
