Sweet Cherry Slushy Cups

Ingredients

  1. 1 cup sweet cherries, pitted and halved
  2. 4 tablespoons sugar
  3. 2 tablespoons cherry eau die vie (kirsch)
  4. 1/2 cup heavy cream
  5. 6 cups crushed ice
  6. Fresh mint sprigs, for garnish

Instructions

  1. Combine the cherries, 2 tablespoons sugar and cherry eau die vie in a bowl and muddle using a muddler or a potato masher, leaving some chunks in the cherries. Let sit at room temperature for at least 15 minutes to allow the cherries to break down and the juice to flow.
  2. Whip the cream to super soft peaks with the remaining 2 tablespoons sugar.
  3. Add the crushed ice to the cherries and toss well. Divide among 4 small bowls and top with a few tablespoons of the loosely whipped cream. Garnish with mint.

This is was super easy, refreshing and most importantly, delicious! My family loved it. I didn’t have kirsch on hand like I thought so I used a few tablespooons of amaretto and creme de cassis. Huge rave, I’ll be making it again!
