Chilled White Gazpacho

Ingredients

  1. 1/2 cup lightly toasted almonds
  2. 2 tablespoons toasted pine nuts
  3. 2 cloves garlic, smashed
  4. 2 1/2 cups white grapes
  5. 1 cup white grape juice
  6. 1/2 cup water
  7. 2 slices country white bread, crusts removed and cubed
  8. 1 cup heavy cream, whipped to soft peaks
  9. 2 to 3 tablespoons verjus
  10. 2 to 3 tablespoons walnut oil
  11. Chopped chives, for garnish
  12. Toasted slivered almonds, for garnish, optional
  13. Champagne grapes, optional

Instructions

  1. Place almonds, pine nuts, garlic, grapes, grape juice, water, and bread in a blender and puree until smooth. Strain the mixture into a bowl. Chill the soup for at least 30 minutes.
  2. Remove soup from refrigerator and fold the whipped heavy cream into the soup. Finish with a few tablespoons each of the verjus and walnut oil. Ladle into serving bowls and garnish each with chives, almonds and grapes, if desired.

verjus is a grape vinegar. You could use fresh lemon juice instead.

I am very anxious to try this, however, not having seen it prepared on T.V. I do not know what verjus is – Can someone enlighten me?

This went great with the pork gyro recipe and was a refreshing soup to have during the hot summer days. Kept it chilled and made for a nice snack the next day; would definitely recommend.
