Caribbean Garlic Sauce

Ingredients

  1. 12 garlic cloves, crushed and minced
  2. 1/2 teaspoon salt
  3. 1 teaspoon ground pepper
  4. 1 large onion, thinly sliced
  5. 1/2 teaspoon ground cumin
  6. 1/2 cup olive oil
  7. 1/4 cup lime juice
  8. 3/4 cup orange juice

Instructions

  1. With a wooden spoon, blend the garlic and salt together. In a saucepan, heat the garlic mixture, pepper, onion, cumin and oil. Saute on low until the onion is translucent. Add the orange juice and lime juice and heat to a simmer. Serve over chunks of boiled yucca.

Again, CUT back a little on the garlic. Add about a TBS of lemon juice as well to give it more citric acid, and try using Orange-Pinapple juice for an even MORE Carribean taste. I prepared this sauce for broiled chicken breasts and it was very tasty.
