Gina’s Mexican Rice

Ingredients

  1. 2 tablespoons olive oil
  2. 1 large yellow onion, diced
  3. 4 garlic cloves, chopped
  4. 2 cups long-grain white rice
  5. 4 cups chicken broth
  6. 1 packet sazon seasoning with coriander and annatto (recommended: Goya)
  7. 2 small plum tomatoes, diced
  8. Salt and freshly ground black pepper
  9. 3 tablespoons freshly chopped cilantro leaves

Instructions

  1. Heat the oil a large saucepan over medium heat. Add the onion and garlic and saute until tender and translucent. Add the rice, chicken broth and the sazon packet and stir until the rice is coated with the oil and toasted. Stir in the tomatoes and season with salt and pepper. Reduce the heat to low and cover with a lid. Cook until the rice is tender and all of the liquid is absorbed, about 15 to 20 minutes. Remove the lid and fluff with fork. Gently fold in cilantro and transfer to a serving bowl.

I made Carne Asada Tacos tonight and made this rice to got with it…OMG…the flavors was like a firework all in my mouth…can’t wait to make this again…

I made this rice for a party and it was delicious. I did make a few changes based on the reviews and it turned out perfect. 1. Used two seasoning packets. 2. Cooked the rice with the seasoning for a few minutes before adding the broth. 3. Used canned diced plum tomatos, about 1/3 of a can. 4. Didn’t add the cilantro since many people don’t like it.

Great, simple recipe. No seasoning packet? Use Lawry’s seasoned salt and cumin. A nice addition is corn kernels and even small diced red pepper.

I just made this rice dish and it was like eating fresh cilantro. I could not taste the one packet of Sazon seasoning. It must have been used for color only. I could not taste the onions, just cilantro. I can eat it but I won’t make it again. Gina, Gina.

I made as directed except I added two packets of Sazon seasoning. It still was very bland. Better recipes out there. Will not make again.

We loved this rice! I added it to bean burritos and it was soooo good! I had to use.taco seasoning instead of sazon, and threw in some monterey jack and cheddar cheese at the very end along with some hot sauce…YUMMY!

This is good to use for stuffed peppers.
I cook some shrimp in the chicken broth first, remove them, add some water to the remaining broth to bring it back to 4 cups.
Finish the rice, then add them back in at the end.
Now you talk about something that is “OH SO GOOD!!!!”

I made this rice last night for my children and grandchildren – 17 in all. We also had tacos. I made a triple batch and it was absolutely delicious. Everyone loved it and it was soooo easy to make.
