Ingredients
- ⅔ cup quinoa
- 1 ⅓ cups water
- 1 bunch kale, torn into bite-sized pieces
- ½ avocado – peeled, pitted, and diced
- ½ cup chopped cucumber
- ⅓ cup chopped red bell pepper
- 2 tablespoons chopped red onion
- 1 tablespoon crumbled feta cheese
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 ½ tablespoons Dijon mustard
- ¾ teaspoon sea salt
- ¼ teaspoon ground black pepper
Instructions
- Bring the quinoa and 1 1/3 cup water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
- Place kale in a steamer basket over 1 inch of boiling water in a saucepan. Cover saucepan with a lid and steam kale until hot, about 45 seconds; transfer to a large plate. Top kale with quinoa, avocado, cucumber, bell pepper, red onion, and feta cheese.
- Whisk olive oil, lemon juice, Dijon mustard, sea salt, and black pepper together in a bowl until the oil emulsifies into the dressing; pour over the salad.

Loved this recipe! It was so fresh and light…great dish for summer. I added about 10 cherry tomatoes quartered, some kalmata olives and served with grilled chicken.
Delicious. I added veggie boulion in with the quinoa to give it a bit more flavor. Also added cherry tomatoes. I’d like to try it with roasted chickpeas too!

Loved it! I eliminated the cucumbers because I don’t care for them. Otherwise, I followed the recipe. The family loves it and I have to double the recipe now
I added fresh jalapeno finely chopped and Grape tomatoes cut in quarters. I omitted the red bell pepper.
This salad is SOOOO yummy. I didn’t think I’d like it because of the quinoa but it’s so tasty and holds up in the fridge!

This is a great recipe! I removed the bell peppers and used low-fat Balsamic Vignagrette salad dressing. Yummy!
I love this salad and so does everyone else who has tasted it. We were going to have friends over and they wanted to delay due to the need to eat healthy. I said I have some delicious healthy recipes. Usually I serve this with salmon steaks but tonight I served it with baked yams. For four of us I doubled the recipe and had a little left over. I also really enjoy a balsamic glaze drizzled over this! It’s delicious on its own but the balsamic glaze kicks it up a notch! In the attached photo, I had not yet added the feta cheese. . . That’s important! 😉
Yum! I use some homemade fermented or pickled red onions in place of fresh cut and throw in diced chicken, ham or egg for some added protein.

Stephanie you went over and beyond delicious. I’m always trying to find healthy recipes (without sacrificing taste) for my fitness group I teach. This was a hit. Thank you, next time I have to double the recipe. I usually make healthy dishes once a month as a little treat after class and serve them in the teeny, tiny tasting bowls, but this time, they looked at me like I was crazy…so it was requested for our next treat as a full lunch. Isn’t that some nerve??.
I had this as late lunch, since am trying to loose weight and my daughter loved it. I omitted the cheese and was still delicious
I don’t normally post reviews about many recipes on here although I use All Recipes all the time. This salad though….. wow! Even my hubby who is a self described kale hater loved this salad. I didn’t change anything about the salad. For us it was perfect and it will be transferred (with credits of course) to my Grandma’s Recipe box.

I now have a new delicious salad..I replaced the dijon mustard with stone ground mustard and added maple syrup and apple cider vinegar to the vinaigrette

Loved this dish. I don’t care for kale so substituted spinach. Also added toasted walnuts to give it a little more crunch. Will Definitely make again
Wow! Loaded with flavor! We substituted spinach for the kale, but other than that we stuck with the recipe. At it with Arabic pita and it was a great, healthy and not too heavy dinner!
Made as described and it was delicious. Next time will experiment with adding different veggies and spice to the dressing.
