In my opinion, good poke has a little bit of everything in every bite. The goal is to have the ingredients cut to roughly the same sizes so that you get it all in one glorious spoonful. Remove ingredients or add ones that you love to make it your own. I usually use all of the Cali Dreamin’ sauce with this recipe, but you can go light if you don’t want a heavy amount of sauce.

Ingredients
- 3 tablespoons raw sugar
- 2 tablespoons soy sauce (see Cook’s Note)
- 1 1/2 cups mayonnaise
- 3 tablespoons sesame oil
- 18 ounces ahi tuna, cubed into about 1/2-inch pieces
- 9 ounces crab meat, cut into 1/2-inch pieces (you can substitute this with cooked shrimp)
- 9 ounces avocado (about 1 1/2 depending on the size), diced into 1/2-inch pieces
- 6 ounces cucumber, quartered long ways and sliced thin crosswise
- Hot rice, for serving, optional
Instructions
- In small saucepan, stir together the sugar and soy sauce. Cook over medium-low heat to bring the mixture to a simmer, then reduce to low heat. Once the sugar is dissolved, remove from the heat and let cool.
- Add the mayonnaise to a mixing bowl along with the soy sauce mixture and sesame oil. Whisk well until smooth and uniform in color and set aside.
- In another bowl add the tuna, crab, avocado and cucumber. Add the Cali Dreamin’ sauce and mix well. Refrigerate for at least 20 minutes. Eat by itself or as I prefer, over hot rice.
