Ingredients

  1. 1 (8 ounce) package dried spinach tortellini
  2. 1 (8 ounce) package dried three-cheese tortellini
  3. 1 cup grape tomatoes, halved
  4. 1 (6 ounce) jar marinated artichoke hearts, drained and chopped
  5. 1 (6 ounce) can sliced black olives, drained
  6. ½ red onion, thinly sliced
  7. ¼ cup grated carrots
  8. 1 ½ cups oil and vinegar dressing

Instructions

  1. Fill a large pot with lightly salted water and bring to a rolling boil. Stir in spinach and three-cheese tortellini and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still slightly firm, 10 to 11 minutes.
  2. Drain well, and allow tortellini to cool.
  3. Toss together the tortellini, grape tomatoes, artichoke hearts, olives, red onion, carrots, and dressing in a large bowl.
  4. Cover and refrigerate until chilled, at least 3 hours or overnight.

This turned out really good and gets better the longer it sits. I wasn’t able to find the dried spinach tortellini but I found a tri-color blend in the freezer section and cooked those according to the package directions. The one thing I will point out is that this is very olive forward. I love olives so it worked good for me but I’d cut back and use a 4 ounce can for a more even ratio. The reason I’m giving this 4 stars instead of 5 is because 1 1/2 cups of dressing would have been way too much. I started with 1 cup and wish I’d have used even less. Overall great recipe and one I’d make again with a couple of minor tweaks.

This salad was wonderful. I brought it to an outdoor barbecue and everyone raved over it. I forgot the onions but maybe that was good for a crowd. I also added a can of hearts of palm and zucchini squash since I didn’t have any spinach. I’m planning on making this again real soon!

I just used cheese tortellini from Trader Joe’s and Vidalia onions and skipped the carrots (too lazy to grate them). This was phenomenal. People who claimed not to care for pasta salads loved it. I made the dressing with very high quality oil and vinegar, which brought this over the top. And it really was easy – it was a last minute addition to a party buffet based on things I had on hand.

A+ salad! Instead of the spinach tortellini we added 2 packages of the tri-color cheese filled tortellini. Also topped it off with some feta cheese crumbles. We used a caesar vinaigrette dressing (that we had on hand) in place of the oil and vinegar – – added a nice flavor. Didn’t have marinated artichokes so we used the plain ones. * * The key was to let it set at least 3 hours for all of the flavors to settle.

We Loved it–I did add sliced scallions, 1 lb. large shrimp- cut in half, a 12 oz jar of artichokes & an 8 oz. tub of shredded 3 cheese romano-parmesan-asiago mix. It was scrumptious! Everyone Scarfed it down. You could use any meat or skip the meat, or add a jar of pimentos or chopped red bell peppers & or diced celery too. Very versitile!

OMG!!! A friend of mine made this and brought it to my house warming party and everyone RAVED about how good it is!! You can pretty much add or remove whatever you like!! So GOOD!! We use the Cheese Fantastico dressing!! Super Delicious and SUPER EASY!!!
