There are so many things I love about this recipe. For one, it makes my house smell so cozy and delicious. It’s also a “set it and forget it” recipe. (I love those!) And, I can make it ahead and serve it to a crowd — with or without the rum added.

Ingredients
- 8 cups unfiltered apple cider
- 1/3 cup firmly packed light brown sugar (see Cook’s Note)
- 1 tablespoon whole allspice
- Five 4-inch cinnamon sticks, plus more for serving
- 3 pods star anise
- 2 teaspoons whole cloves
- One 2-inch piece fresh ginger, peeled and smashed
- 1 large orange, cut into quarters
- 1 to 1 1/2 cups dark rum
- 1 Granny Smith apple, sliced crosswise; seeds removed
Instructions
- Combine the apple cider, brown sugar, allspice, cinnamon sticks, star anise, cloves, ginger and orange in a large saucepan. Bring to a simmer over low heat. Cover and simmer (do not boil) for 1 hour, stirring occasionally.
- Strain the cider through a wire mesh strainer into another saucepan. Stir in the rum. Ladle the cider into serving mugs and garnish with apple slices and cinnamon sticks.
