Ingredients
- 1/2 cup (1 stick) unsalted butter
- 1 3/4 cups sugar
- 1/2 cup milk
- 3 cups quick-cooking oats
- 3/4 cup peanut butter
- 2 teaspoons vanilla extract
- 1/4 teaspoon kosher salt
- 1 cup (6 ounces) milk or dark chocolate chips
Instructions
- Line 2 baking sheets with wax or parchment paper.
- Melt the butter in a 3 1/2-quart saucepan over medium heat. Stir in the sugar and milk and bring to a boil; boil for 1 1/2 minutes.
- Remove from the heat and immediately stir in the oats, peanut butter, vanilla and salt, stirring to combine. Add the chocolate, stirring until just combined.
- Drop the dough by rounded tablespoonfuls on the prepared baking sheets. Let the cookies stand until set, about 30 minutes.

I made these tablespoon size and ended up with 45 nice sized cookies. I used semisweet chocolate because I already had some and I flattened them slightly with the tablespoon so they looked more like cookies. Delicious and easy! Will make again for sure!
These are so delicious that I made them twice in two weeks! I used mini chocolate chips (they melted and stirred in fast). Also used a small scoop which made the cookies bite size!

Just made these for a work party. I hope I don’t eat them all before tomorrow! I was surprised just how good they came out. I’ll definitely be making them again!!!! (Now excuse me while I eat another) lol
