Ingredients
- 1 pound ground beef
- 1/2 medium onion, chopped
- 1 garlic clove, minced
- 1 jalapeno, seeded and chopped
- 1 can pinto beans, drained and rinsed
- 2 cups tomato sauce, homemade or store-bought
- 1 medium tomato, chopped
- 1 cup grated Cheddar cheese
- 1 cup self-rising cornmeal mix
- 1/2 cup self-rising flour
- 1 large egg
- 1 cup buttermilk
Instructions
- Preheat the oven to 400 degrees F.
- In a large ovenproof skillet or Dutch oven set over medium heat, cook the ground beef, breaking up the meat with a wooden spoon, until browned through, 3 to 5 minutes. Drain the fat from the meat. Add the onion, garlic, jalapeno, pinto beans, tomato sauce, and tomato and remove the pan from the heat. Top with the cheese.
- In a medium bowl, combine the cornmeal, flour, egg, and buttermilk. Pour the mixture on top of the meat mixture.
- Bake until the cornbread topping is lightly browned, 15 to 20 minutes. Serve hot.

Had plenty of flavor, wouldn’t change a thing! A new family favorite. Only thing is I used Bob’s Mill Cornbread mix instead of the cornbread suggested in the recipe
Loved this! So easy and a very comforting meal. Used ground turkey in place of the beef, and since I didn’t have a fresh tomato on hand, substituted a 15 oz can of diced tomatoes (drained). Took the tip from other reviewers to use a box of Jiffy cornbread mix, and it worked beautifully. We found it to be well-seasoned, without doing anything extra to it. Added a dollop of sour cream on top, and enjoyed greatly.
My husband like this and will make again. Since one reviewer said it was bland I used Bushes chili beans and added green pepper to the mix of vegetables. I purchased Jiffy biscuit mix thinking I was buy a cornbread mix but was still very good.
I would definitely make this again, but I think it needs more seasonings, it was a little bland as is. was still very good though
This was yummy. Different. I bought cornbread and crumbled it on top, then baked it for 15 minutes to warm it up. I added a little sriracha to the dish when I plated it.
This was a big hit with my family. I used 2 boxes of jiffy cornbread mix and used buttermilk instead of milk. It worked perfectly. I seasoned the ground beef prior to adding the onions and stuff.

I only rated it 2 stars because I had to modify it quite a bit to is to like it. Added a can of corn to the mixture. Added chili powder, cumin and salt to the meat while cooking. Next time I’ll cook the onions with the meat. Added 2 tablespoons of butter and a tablespoon of sugar to the cornbread mixture, but will add slightly more butter and some salt next time.
I did add salt and pepper when I browned the meat. Seems there’s a bit more cornbread than filling, but it was tasty and filling.
This dish is so yummy and comforting! I salted my beef just out of habit but honestly even if you didn’t the marinara and cheese has enough salt I think to still make it great! Love it and so simple to make. I had it ready from start to finish in less than an hour! It’s going to be a staple in our house.
Absolutely delicious! My husband & I really enjoyed it. We added salt, pepper, cumin & chili powder to our meat & used a corn bread mix instead. Will definitely be making it again.
