Ingredients

  1. 2 1/4 cups chopped tomatoes
  2. 3/4 cup red wine vinegar
  3. 1/3 cup minced shallots
  4. 1/4 cup minced red onion
  5. 1/4 cup sugar
  6. Salt
  7. 4 baguette slices, about 3/4-inch thick, lightly toasted
  8. 4 slices burrata cheese, about 1/2-inch thick
  9. Olive oil
  10. Sea salt and fresh cracked pepper

Instructions

  1. For the marmalade: Heat a large skillet over medium heat. Add the tomatoes, vinegar, shallots, onions, sugar and salt to taste. Cook until almost all the moisture has been cooked out, making sure to stir continuously. 
  2. Schmere tomato marmalade on the toasted baguette slices. Top each with a slice of burrata. Drizzle each with olive oil and sprinkle over sea salt and cracked pepper.

This is delicious!! I love Burrata cheese and am always looking for new recipes to use it. The tomato marmalade was just so so good!
