Ingredients
- 2 pounds sweet potatoes (about 3 medium potatoes), peeled and cut into 1-inch chunks
- 1/4 cup pure maple syrup
- 1/4 cup low-sodium chicken broth
- 2 tablespoons unsalted butter
- Kosher salt and freshly ground black pepper
- 1/2 cup loosely packed flat-leaf parsley leaves, chopped
- 1 tablespoon prepared horseradish
Instructions
- Preheat the oven to 400 degrees F. Put the sweet potato chunks in a 3-quart casserole dish in an even layer.
- Bring the maple syrup to a gentle boil in a small saucepan over medium-high heat. Boil for 1 minute, then add the broth. Let come to a boil again, then cook for 1 minute more. Turn off the heat and whisk in the butter. Pour the mixture over the sweet potatoes and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Cover the dish with foil and roast until the potatoes are tender, about 30 minutes. Remove the foil and continue to roast until the sauce is reduced to a glaze, 10 to 15 minutes. Add the parsley, horseradish and 1/4 teaspoon salt and stir to coat the potatoes. Serve hot.

This is an inspired dish, especially adding the horseradish. We cooked it using yams stead of sweet potatoes and loved it. Don’t think Jewell knows what she’s talking about. This is even better topped with bacon crumbles (forget the parsley).
I don’t understand why the previous two ratings for this recipes have been so poor. We made this recipe for a dinner with family who adhere to a very strict gluten- and corn-free diet. We all thought it was really delicious. I am an avid cook and would make this recipe again on a regular basis. I often get very bored with the same or very similar recipes for healthy side dishes and I felt that the horseradish gave this otherwise boring old dish a fantastic and delicious twist.
Not bad. Actually made this before posting a comment. Roommate ate it with no complaints. If it was bad, trust me, he would not have eaten it. You really don’t taste the horseradish that much. It doesn’t overpower the sweetness of the dish at all. I love horseradish but if you don’t care for it this dish can stand on its own without it. I’d make it again. Might even double up on the horseradish so I can taste it a litle more. Absolutely nothing wrong with this recipe.
I have seen some dumb and ridiculous recipes before, but Maple Sweet Potatoes with Horseradish has to be in the “Top Ten of Stupid Ideas”. I give it One Star only because it is required. My real opinion is about a MINUS 5 Stars.
