Soba Noodles with Glazed Salmon

This recipe is all about getting the most out of your ingredients. Soy sauce, vinegar and honey are reduced to a glaze with fresh orange juice to coat salmon filets before broiling until deliciously charred. Pickled ginger is mixed with soy, honey and vinegar to make a punchy sweet-and-sour dressing for soba noodles, served with crisp-tender bok choy and scallions.

Ingredients

  1. 1/4 cup plus 2 tablespoons low-sodium soy sauce
  2. 1/4 cup fresh orange juice
  3. 1/4 cup balsamic vinegar
  4. 1/4 cup honey
  5. 1/2 teaspoon red pepper flakes
  6. 2 bunches scallions (2 scallions sliced, the rest chopped)
  7. 2 heads baby bok choy, trimmed and roughly chopped
  8. 1/4 cup toasted sesame oil
  9. Kosher salt and freshly ground pepper
  10. 2 tablespoons minced pickled ginger, plus 1 tablespoon liquid
  11. 1 9-ounce package soba noodles
  12. 1 1/4 pounds center-cut salmon fillet, cut into 4 pieces

Instructions

  1. Bring 1/4 cup soy sauce, the orange juice, 2 tablespoons each vinegar and honey and 1/4 teaspoon red pepper flakes to a boil in a saucepan. Lower the heat and simmer until reduced to 1/4 cup, 5 to 7 minutes. Transfer the soy glaze to a small bowl to cool.
  2. Bring a large pot of water to a boil. Preheat the broiler. Combine the chopped scallions and bok choy on a baking sheet, toss with 3 tablespoons sesame oil and season with salt and pepper. Broil, tossing once, until charred in spots, about 3 minutes.
  3. Whisk together the pickled ginger and liquid, the remaining 2 tablespoons each soy sauce, vinegar and honey, 1 tablespoon sesame oil and 1/4 teaspoon red pepper flakes in a large bowl.
  4. Cook the soba noodles in the boiling water as the label directs. Drain and rinse under cold water, shaking off the excess. Toss with the ginger dressing and vegetables; season with salt and pepper.
  5. Put the salmon skin-side down on a rimmed baking sheet; season with salt and pepper. Brush with most of the soy glaze. Broil until starting to char, about 3 minutes. Brush with the remaining glaze and broil until browned, 1 to 2 more minutes. Serve with the noodles and top with the sliced scallions.
