Ingredients

  1. 1 ½ cups all-purpose flour
  2. 1 teaspoon baking powder
  3. 1 teaspoon baking soda
  4. 1 teaspoon ground cinnamon
  5. ½ teaspoon salt
  6. 1 pinch ground nutmeg
  7. 3 bananas (ripe or very ripe work best)
  8. ½ cup white sugar
  9. ⅓ cup butter, melted
  10. ¼ cup lightly packed brown sugar
  11. 1 large egg
  12. 1 teaspoon vanilla extract
  13. ¼ cup chopped walnuts (Optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  2. Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
  3. Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.
  4. Divide batter evenly among the prepared muffin cups.
  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.

I did not give this a 5 because I made a small change: I omitted the brown sugar altogether. I used really ripe bananas (therefore, sweet). However, with those changes we found them delicious! Grandkid approved!

Two of the bananas I used needed to be more ripe for this to be better. That is not the fault of the recipe. Maybe more than three would help add more flavor?

Really good, very moist. My kids ate the whole batch in a day and a half. I used five bananas because that’s what I had and didn’t want to waste them. Came out great.

I did chocolate chips and baked mini muffins for the kids.My bananas were overripe. My oven took about 13-ish minutes for the mini ones. They came out perfect. 5 stars because the kids love them too!

I loved this recipe. I used palm oil instead of butter. I used twice the spices and used kosher salt. I also used macadamia nuts instead of walnuts. It made 12 perfectly yummy muffins! This recipe is a new favorite.

So good! I made oat flour (blended rolled oats) to replace AP flour to be healthier. They didn’t rise as pretty as the photo, but that didn’t matter. I used 3 large bananas very ripe, and I did add more walnuts than the recipe. I will change 1/2 C white sugar to 1/3 C sugar next time because they were very sweet but delicious! I froze them and will be breakfast muffins for us (my husband loved them, too) but they are a real treat!

I am Vegan so added 2/3 cup of applesauce instead of butter and I used egg replacer instead of eggs and the muffins are great. Thanks!

Great simple recipe I just made. I had 2 very ripe and 1 just ripe bananas and I used a vegan (almond based) melted butter and missed the nutmeg. Absolutely delicious and moist. I’m going with this for future recipe setting’s with maybe some crushed walnuts added for added texture. Update- I accidentally set my oven to 375 deg. F and not the recommended 350deg. IDK why but I couldn’t taste any difference and they weren’t burnt, again, IDK.

Fell in love with this first time. Then decided to add a heaping cup of blueberries dredged in a bit of the last bit of four at the end. WOW! I also went to 1/2 C butter and 1/2 C of brown sugar vs 1/3 and 1/4 respectively. I make 16 muffins with these additions. I cook 22 minutes. Best recipe ever!

These muffins are delicious. I did alter the recipe by using 3/4 cup dark brown sugar (no white sugar), 1 cup chocolate chips and a large muffin tin (it made 7 large muffins) Nice and moist. I would make these again

It was great!!! I’ve made it 3 times now, once strictly following the recipe, the next time I only had two bananas, so added drained crushed pineapple. My husband loved it, so this time I used bananas, pineapple and coconut, and it was awesome!!!!! ❤️

I added a little honey (about a teaspoon) to the bananas since I had to use the oven method to ripen them and was afraid they might not be sweet enough. I also sprinkled some turbinado cane sugar on top for added sweetness.
