Ingredients
- 1/3 cup rice vinegar (not seasoned)
- 2 tablespoons soy sauce
- 2 tablespoons honey mustard
- 1 tablespoon grated peeled ginger
- 3 tablespoons vegetable oil
- 3 tablespoons sesame oil
- 1 pound skinless, boneless chicken thighs
- 1 small head napa cabbage (about 1 pound), cut into bite-size pieces
- 1 medium carrot, thinly sliced
- 4 scallions, thinly sliced
- 1/4 pound snow peas, cut crosswise into thirds
- Kosher salt
- 1/2 cup chow mein noodles
Instructions
- Preheat a grill or grill pan to medium high. Make the dressing: Whisk the vinegar, soy sauce, honey mustard and ginger in a medium bowl, then add the vegetable and sesame oils in a slow stream, whisking until combined. Toss the chicken with 1/4 cup of the dressing in another bowl; let marinate 10 minutes at room temperature. Remove the chicken from the marinade (discard the marinade) and grill until cooked through, 4 to 5 minutes per side. Transfer to a cutting board; let rest 5 minutes. Meanwhile, toss the cabbage, carrot, scallions and snow peas with the remaining dressing in a large bowl. Cut the chicken into 1/2-inch pieces and toss with the salad. Season with salt. Top with the chow mein noodles.

I loved this! I felt so healthy eating it! I added apricots (that’s all I had) for that salty-sweet unami. I also sprinkled sesame seeds after I put the dressing in the salad. Simply delicious!!!
The amount of vinegar in this sauce is unbearable and the vegetables are really rubbery, but the sauce is the worst.
Had for a hot summer night in Montana with our own free range chicken legs. It was a fast tasty dinner.
First time giving 2 star ever on here, the only thing any of us liked was the chicken, so I make that but the salad I don’t make, very disappointed.
This was delicious! I only had chicken breasts on hand and just grilled it 7 min per side. Also my grocery store was out of napa cabbage so I just used a bag of pre shredded cabbage coleslaw mix. It was really good this way and cut down on the prep time.
Wonderful!! Nice spring or summer meal. Easy to make. The dressing taste similar to the Asian dressing by Kraft.
Just blah..nothing special to me. Although the chicken was juicy..a chicken breast will be much better health wise.
Tastes great, but it is very high in fat. For a salad to be 13 points on WW is very unusual. One serving is nearly 1/2 your daily ballowance. That’s not to say “skip it”, but just beware it’s not as light as it may appear.

Very nice, light salad. I had leftover chicken, but next time will marinate and grill the chicken as per the recipe. I added one cut-up orange. I didn’t have any noodles on hand, and would have enjoyed the extra crunch.
