Sexy Air-Fried Meatloaf

What could be sexier than a quick supper that doesn’t involve a lot of effort, weird ingredients, or heat up the house? This air fryer meatloaf is spicy, saucy, and luscious. You can have a wonderful and delicate meatloaf on the table in less than an hour, but more significantly, with very little effort. Add mashed potatoes if desired.

Ingredients

  1. ½ pound ground pork
  2. ½ pound ground veal
  3. 1 large egg
  4. ¼ cup chopped fresh cilantro
  5. ¼ cup gluten-free bread crumbs
  6. 2 medium spring onions, diced
  7. ½ teaspoon ground black pepper
  8. ½ teaspoon Sriracha salt
  9. ½ cup ketchup
  10. 2 teaspoons gluten-free chipotle chili sauce
  11. 1 teaspoon olive oil
  12. 1 teaspoon blackstrap molasses

Instructions

  1. Preheat the air fryer to 400 degrees F (200 degrees C).
  2. Combine pork and veal in a nonstick baking dish that fits inside the air fryer basket. Make a well and add egg, cilantro, bread crumbs, spring onions, black pepper, and 1/2 teaspoon of Sriracha salt. Mix well using your hands. Form a loaf inside the baking dish.
  3. Combine ketchup, chipotle chili sauce, olive oil, and molasses in a small bowl and whisk well. Set aside, but do not refrigerate.
  4. Cook meatloaf in the air fryer for 25 minutes without opening the basket. Remove meatloaf and top with ketchup mixture, covering the top completely. Return meatloaf to air fryer and bake until internal temperature reaches 160 degrees F (71 degrees C), about 7 minutes more.
  5. Turn off air fryer and let meatloaf rest inside for 5 minutes. Take meatloaf out and let rest 5 minutes more before slicing and serving.
  6. Sriracha or Cholula(R) would work in place of chipotle sauce.
  7. You can use regular bread crumbs in place of gluten free.
  8. If you want the loaf browned on the sides, make a ball in the middle of the dish so that the sides are not touching the walls of the baking dish. If you don’t want the sides to be crispy, pat down the mixture so that it is touching all 4 sides of the baking dish. Either way you choose, cooking time will remain the same.

The meatloaf was great. I didn’t use the same ingredients, I changed it up a little. I used instant onions, garlic powder, seasoned salt, 1 egg, oatmeal instead of bread crumbs. I loved being able to place the meatloaf in a pan and then insert the pan into the tray. The flavor was delicious. I think next time I will lower the temp to 350* FOR 25 min.

I made this tonight for my husband and I, it was just right for the two of us with some left for later. The only change I made was to mix everything up in a bowl,then put in the pan (lined with foil). Next time I will check on the pre-topping bake as at 25 minutes it was just starting to get too brown. The topping was delicious, I’ll probably double it and serve half on the side.
