Turkey Sopa Seca Casserole

  4.5 – 11 reviews  • Queso
Made by lightly frying vermicelli noodles and then cooking them in a rich broth flavored with spices, chipotles en adobo and tomatoes, sopa seca is a beloved Mexican comfort food. We added diced turkey to the mix and transferred it to a casserole dish, topped it off with cheese and baked it in the oven..

Ingredients

  1. 1/4 cup extra-virgin olive oil, plus more for preparing the pan
  2. 10 ounces fine vermicelli noodles in bundles (fideo)
  3. 1 medium onion, diced
  4. 3 large garlic cloves, minced
  5. 1 teaspoon ground coriander
  6. 1 teaspoon dried Mexican oregano
  7. 1 teaspoon New Mexican chile powder
  8. 1 bay leaf
  9. 1 1/2 cups canned tomatoes and juices, crushed
  10. 1 to 2 chipotles en adobo, minced
  11. 1 1/2 cups chicken broth, homemade or low-sodium canned
  12. 2 cups diced cooked turkey, chicken, or smoked chicken breast
  13. Kosher salt and freshly ground black pepper
  14. 1 cup coarsely chopped queso anejo or feta cheese
  15. 1 cup sour cream
  16. 1 tablespoon finely chopped fresh coriander (cilantro)
  17. 1 lime, cut into wedges

Instructions

  1. Preheat the oven to 375 degrees F. Brush an 8 x 8-inch casserole dish with oil. Set aside.
  2. In a large skillet over medium heat, heat the oil. Add the raw noodle bundles, and saute turning with a pair of tongs until golden brown on both sides, about 5 minutes. Transfer the noodles and any pieces to a plate.
  3. Saute the onion in the same skillet, over medium heat, until light golden, about 4 minutes. Add the garlic, ground coriander, oregano, chile powder, and bay leaf, stirring until fragrant, about 30 seconds. Add the tomatoes and the chipotles, increase the heat to high, and cook for 2 minutes, until thickened. Add the broth and noodles to the skillet and season with salt and pepper to taste. Bring to a gentle simmer, lower the heat and cook for 5 minutes, breaking up the noodles with a spoon. Stir in the turkey. Turn the mixture into the casserole dish. Sprinkle the cheese over and cover with foil. Bake for 30 minutes.
  4. In a small serving bowl, stir together the sour cream and fresh coriander. Serve the casserole with the flavored sour cream and the lime wedges on the side.

What should I have as a side with this?

This is a great way to use leftover Turkey! I followed the recipe exactly and is has wonderful layers of flavor. I used 2 Chipotles in Adobo and I think it was right at the edge of my heat level. I may only use one the next time, but there will be a next time!

Loved it! I didn’t have vermicelli so I used angel hair instead and I didn’t sauté it. I also used cheddar cheese because I didn’t have a Mexican cheese around. Like imacouleegirl said, it sounds like a weird recipe, but it was VERY tasty. I think I’ll be making this one again with the suggested ingredients!

I wanted to try something new, so I made this dish last night and was very satisfied. I used leftover chicken and I also used queso quesadilla. My husband liked this dish as well. I will be making this dish again.

This sounded like an odd recipe, but it was great!

I found this recipe while looking for an idea for turkey leftovers. It is fabulous. I have made it several times and it never goes to waste. Full of layers of flavor. Try it, you will love it.

While the flavor of the dish was acceptable, there just wasn’t enough cheese (or anything else) to hold the recipe together.

rather disappointing

The hardest thing was the cooking of the Vermacilli. It was messy and if you do not have the right pot or tongs part of the noodles would be over cooked and others will be undercooked. Also, you will need to make sure all ingredients are pre measured and ready to go because the timing from the red onions through the seasonings are critical.
