Ingredients
- 1 ½ pounds catfish fillets
- ½ cup yellow cornmeal
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon celery seed
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon ground black pepper
- ½ cup skim milk
- cooking spray
Instructions
- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and coat with cooking spray.
- In a shallow dish, stir together the cornmeal, paprika, thyme, salt, celery seed, onion powder, garlic powder, and pepper. Dip the catfish fillets in milk, then place them into the cornmeal mixture and coat liberally; place on the greased baking sheet. Coat the tops of the fillets with cooking spray until wet.
- Bake for 15 minutes in the preheated oven, or until fish is easily flaked with a fork.

I wanted to rate as 5 stars, but I needed to stop and make more seasoning as I ran out half way through dredging. I still saved this recipe off for future use. It’s very delicious and doesn’t need sauce or anything extra. I served with a green salad and mac n’ cheese.
This was excellent. Great blend of spices, not too salty, not overpowering and it let the flavor of the fish show through. The cornmeal gave it great texture. I thought that maybe the cooking time of 425F for 15 min. might dry out the fillets, it didn’t they turned out perfectly. Absolutely will make this again.

Made as written. Very quick. We liked it, but would like it more heavily seasoned. Next time I will add a shake of Slap Yo Mamma seasoning.
I follow this recipe all the time now. It’s simple and fast. The only deviations I make is to not bother with all the herbs and spices and instead mix any of the Mrs. Dash no salt spices mixes or simply cayenne pepper with the cornmeal.
Cuts filets into small pieces for extra crunch. Added egg to milk to help breading stick. Added crunchy crushed potato chips to corn meal. Used Old Bay Garlic and Lemon seasoning instead of multiple seasoning to simplify steps. Made a homemade tartar sauce. Everyone liked it!

The first time I made it, I followed the recipe exactly, and it was delicious! Second time I made it, I didn’t have enough spare milk, so I just rinsed the fillets with water, shook off the extra, and dredged them, and it was indistinguishable from using milk. Well nothing beats actual fried catfish, the flavor in this recipe makes up for it. One of the best recipes I’ve ever made from this site!

Next best flavor and texture to deep frying but nearly without all the negative health affects of frying. I like it as written, with exception that I use no salt. Cornmeal has adequate salt for my buds…..
instead of using milk I marinated the fish in olive oil and herbs I cannot have milk. It was great !

I did exactly what the recipe called for except the hot sauce in eggs. Since we are from Tennessee & Mississippi and know good catfish, this recipe is excellent compared to the fried version.
I made and baked according to the recipe. I did bake 20 mins on one side, flipped and baked an additional 10 minutes. I like my fish crispy. SO GOOD!

It tastes great. I gave it 4 stars because I did add a little bit of Cajun seasoning to get the flavor just right and I could not figure out how to get it to be crunchy like it would be with a hard fry. Not that I expected it to be but it is one of the characteristics about traditional fried catfish that I missed.
This was great! I used buttermilk instead of regular milk just because I had it and needed to use it, but I think it would be very good either way. I don’t have any suggestions – it was perfect. Easy and much lower in fat than fried. My new go-to for catfish! Thanks for a great recipe!
